I have been a vegetarian for around a year but I have got into a bit of a rut with my lunch and dinner ideas.

What are your favourite meat-free meals?

The green roasting tin is a great book. I made ratatouille from it the other day but there are loads of other good recipes in it.

We do dhal a lot

We also do veggie shepherds pie and chilli sans carne quite often. Left overs as quesadillas with loads of cheese!

Bean chilli - can put with rice, over jacket potato, or in a burrito/enchilada etc
Veg and halloumi kebabs
Stuffed peppers (I like to stuff with mushrooms, aubergine and cheese)
Veggie lasagne, hotpot, or moussaka - use beans or lentils to bulk up
Tofu ramen or yakisoba - or just vegetarian but tofu goes great with Japanese food
Gnocchi or pasta with pesto and green veg
Salads - use feta, tofu, egg etc
Veggie curries or dal

I second the Green Roasting Tin recommendation. I got it for Christmas but have only recently started trying things from in - the baked gnocchi is particularly wonderful.

Like other posters - I make chillies, curries, Dhal, Bolognese, soups using lentils and chick peas.

However, during lockdown I have beomce obsessed with making this Spanish tapas dish ''espinacas con garbanzos'' (spinach and chickpeas). It's so easy and quick to make, all in one pan and sweet smoked paprika is like crack for my tastebuds!

There are many recipes if you google it. I've been adding on to the basic recipe a lot. I like to add chopped mushrooms and a chopped courgette to bring more veggies into the dish.

I am veggie and loveeee Thai food. I make my own version of a Thai green curry (it's not very authentic but it's my own spin to make things easy).

I cook vegetables (broccoli, carrots, bean sprouts, mushrooms etc) in a wok with oil and a bit of soy sauce, garlic and chilli (fresh or dry)
After about 10 minutes of cooking I add a can of coconut milk, bring to a boil, then add 1 vegetable stock cube (not authentic I know but it works)
Cook for a little longer. Then at the end add some coriander and more chill if needed (I like a lot of spice so add quite a lot) I also add a little lime juice.
Then serve with rice or rice noodles.
It's surprisingly delcious!

A side to compliment this dish would be sweet corn cakes.
I toast the sweet corn in a pan in a bit of oil and butter (vegan or non vegan). In the meantime I make a batter in a jug.
1 way (non vegan) is plain flour, milk and 1/2 eggs salt and pepper.
Vegan alternative would be plain flour, soda water salt and pepper (this is more like a tempura batter).
Then tip the corn into the batter, mix round.
Heat up oil in a pan and add about two spoons of mixture to make a small cake (depending on size of pan you can fit about 4 fritters at a time) , fry on both sides until golden.
