A couple of weeks ago Parliament passed a new Agriculture Bill regarding International trade Agreements and Compliance with UK and Word Trade Organisation Standards.
The govt pushed it through with a majority of 79. It says that under new international treaties, any food or agriculture products imported into UK will not have to comply with World Trade Organisation safety rules and the UK's own standards.
It's well known that American standards, especially regarding the welfare of farm animals, are not as high as ours have been (see link for examples).

With only a few weeks to go before we can extend the transition period, and Govt adamant they won't do that, they must be desperate for a deal with the US. I can't think of there any other reason for this change in the law.
