To ask why I can't make scones and please give me a recipe?

I have tried and failed around 6 times to make scones, each time becoming so disheartened that I've not tried again. BUT I have been craving a scone with jam and cream since February, not knowing I couldn't just pop out for one within weeks.
I can bake. I can cook. So why can't I make scones? Has anyone got a brilliant recipe (my mum told me she has a new one with Lemonade and cream??!! WTAF?
I need a big scone with dry edges not shiny
High rise, so I can break it apart , one half with butter and jam and the other with cream. Then maybe another half shared with a child. . For clarity I include images of bad scone and good scone below. Bad scone (left) is thin and shiny. Well done if you read this self indulgent nonsense. But I would love a good scone recipe Please. And any must do/ must not do tips. Like flora not butter or vice verse. Cold hands or other such shiz

I swear the only people who ever by Elmlea are confused DH’s sent to the shops.

@RitaMills Wow! Yours are huge towering things. Love it. Which did you use? DH has been told in no uncertain terms about Elmlea and I have procured heavily expensive clotted cream instead. Donated some to neighbours which is risky but hopefully they're ok!

I made scones for the 1st time today - was previously too nervous Grin
Used Nigella's recipe from Kitchen for buttermilk scones.
I didn't have buttermilk so did mixture of natural yoghurt & milk, also didn't have cream of Tatar, so used 1 tsp more of baking powder
They were a triumph!!! And delicious

Op I'm wondering if you're just making them too thin? I haven't had a lot of trouble making scones and I'm not a very proficient baker. I'd perhaps skip the egg wash and just brush a little bit of milk on top to get them to brown just a little bit and put far thicker pieces in the oven than you have been doing so far

Thanks for this thread OP, lots of ideas. I'm the same, I'm generally a pretty competent cook but I cannot seem to make good scones. A lovely warm soft cheese scone covered in cold butter with a proper cafe cappuccino is one of the things I'm missing most in lockdown!

I made delia's plain scones for the first time today. They were incredibly easy and came out light, tall and delicious. Her recipe didn't make many though, so depending on how many you want you might need to double the recipe

I'm intrigued by the round scones by the way. Everyone I know just cuts them into squares or rectangles.

Update: they were bloody amazing!!!!
I used the bbc good food recipe.
The tips you all gave were invaluable, saved me a lot of headache :)
For those of you who still didn’t venture, make them, they’re dead easy and so so much better than the shop bought ones.

OP Congratulations!

I don't think this has been said before - if making cheese scones add a bit of mustard to the grated cheese. Old fashioned 'English' mustard powder is best.

I don't often make scones but I do make soad bread which is similar, and for that, the same rules about quick light handling apply, at least IMHO. Irish Mumsnetters might have more and better tips, however.

I prefer to handle the dough as little as possible. So generally I don't cut out rounds. I simply cut the dough into two equal portions, quickly roll out into two thick rounds and mark the rounds into quarters. Then bake as directed.

I get 8 triangles, nicely risen, can be pulled apart for jam, cream, butter, whatever's your fancy.

Very occasionally, I'll cut out mini scones for a buffet, again handling the dough as little as possible.

I agree Mary berry's are foolproof. Have knocked up several batches in lockdown and hadn't made them since school. They turned out so well I ended up having requests to bake more for family and friends!
