Your favourite Instant Pot recipe?

OK, OK, shamelessly posting here for traffic, clickbaity title and all, but I have finally bought one and now need some great recipes. I know I can rely on mumsnet to come through for me.

No specific dietary requirements, just give me what you've got! TIA.

I have had one for a year and I love it. You can use any slow cooker recipe but don't have to wait 8 hours to have a tender stew or hot pot.
I make mine with diced beef, chopped onion, carrot, swede, parsnip etc. 2 oxocubes, teaspoon of mixed herbs, 1/2 teaspoon of paprika/cumin or whatever you like. Small glass of red wine or ale. Add hot water to cover and set for 30min. You can also add potato if you want. When finished add cornflour (mixed with cold water) or gravy granuals to thicken.

chilli beef using shin of beef/hough

saute onions/celery/spices....sear shin....I do this on the hob while sweating the veg, don't bother to cut it up and get a bit with the bone in.

put meat in on top of veg, add stock/water/wine whatever you fancy and then cook that for about 40-50 mins

I let it NPR and pick the meat out...get rid of any really skinny flabby bits and put the meat back into the stock and fridge it overnight, take the solid fat off in the morning

Next day cook your beans, i often use a mix of cannelini, turtle and pinto, drain those

sweat more onions, celery, a whole chilli or two as you like, and then in goes the beef, the beans, enough stock/wine/beer to cover, tinned toms/passata, good couple of tbs of cocoa, clamp on the lid and let it go for about 30 mins...I often leave it on slow cook or keep warm for ages to plink away all day.

My lot really like it with cheesey nachos and soured cream.

oh yes...butter chicken is amazing

also risotto, but do start it from scratch as you would normally ...sweat veg, melt butter, toast rice, add wine, de glaze pot...it is better than just hurling everything in, it really is

and keema and biryani

and cheesecake

I have not heard of an instant pot but am very interested !
Are they similar to a slow cooker ?
Are they expensive ?

Yes to the risotto! Sweat onion, celery etc add one cup of rice, deglaze then add two cups of stock. High pressure for 7 minutes then quick release and add a big knob of butter and Parmesan.

I've made loads of variations, sometime add the extras at the start (eg butternut squash) or at the end (eg you wouldn't want to add prawns at the start)

Also, the plastic children's cups from Ikea are the perfect size for two greedy portions.

I'd love to try something sweet next so keen to read some ideas!

Pulled pork is great in it, and risotto as has already been said. Plus, another vote for the two sleevers butter chicken

@Samtsirch it's a pot of wonder!! Pressure cooker, steamer, slow cooker, rice cooker, yogurt maker

newer ones have a sous vide function, and there's talk of some sort of halogen type combo lid....they may already have this in the US

I adore mine so much I bought it a baby...there's several sizes

It is pricey, but there are often promos on amazon, but the Instant Pot is pretty much top of the range and there are plenty of other options if you want to save some pennies

I've got a Pressure King Pro (similar thing) which this has reminded me I should use more.

They are expensive, but I got mine from Argos using Nectar points Grin

Chopped flavoured sausages, butternut squash, leeks, stock, garlic, 2 tins of tomatoes. Serve with crusty bread.

I got the Croc Pot version (85 Euros) and can not get enough of anything pulled. Oh and it makes an idiot proof risotto in 12 mins.

Chunks of Oxtail, lots of pepper, thyme, a pierced Scotch Bonnet, turmeric, Allspice, ginger, garlic, squirt of lemon juice, big splodge of tomato puree, white bits of spring onion and some fresh tomatoes. Leave until the fat rises to the top.

Finish with some dumplings (with mustard powder and thyme added to flour and fat, bound with a little water), stir in finely shredded spring onion greens and coriander leaves.

Do not get me started on the most succulent roast chicken I’ve ever had. I had always said that bacon is the reason I’m not a vegetarian but my electric pressure cooker makes meat, especially cheaper cuts, so damn tasty.
