I was inspired by the recent lentil thread and would love to hear any favourite soup recipes or soup cooking tips.
My favourites to make are
Leek and Potato
Spicy Lentil
Tomato and Basil
And the most bland vegetable and pearl barley soup that we just love. It’s so weird it sounds so boring but it’s super comforting just chopped up carrot, swede, onion, potato. Stock cube, bay leaves and pearl barley.
I definitely go for simple recipes that I can eventually make without a recipe but wonder if there are benefits in trying a more complex recipe?

Ahhh I love this!

Def leek and potato is my favourite.

But closely followed by pearl barley veg.

Dice up celery/parsnip/potato/onion/carrot/swede whatever you have. Sauté the onion until lovely, bung in everything else. Chuck in a couple of tablespoons of tomato purée. Add stock and pearl barley. Cook. Eat.

I don't really follow recipes, I just chuck stuff in a pot, add some stock and boil the shit out it.
Particular favourites are Beetroot, apple and Feta, butternut squash with cinnamon and potato and cheese

Pea, courgette and mint is lovely. Frozen peas, sliced courgette, sliced potato and roughly chopped mint with stock, either chicken or vegetable. Cook until everything is very soft then blend, the potato gives more body, but you can leave it out for a light summery soup.
Pea and mint is the simplest soup in the world, bag of frozen peas, handful of mint, stock, blend. Made in 10 minutes.

Carrot, ginger and coconut milk.

Sauté two diced red onions,
Add 2 cloves of garlic
Add chopped carrots and grated ginger.
Vegetable stock,
Cook til carrots are soft, add half a can of reduced fat coconut milk and blend it all.

I love watercress soup - nice and light for summer. For winter, lentil and Red Thai Curry spices. For autumn, Pea N Ham soup. For spring, chicken noodle or tomato and basil.

But I love soups at any time of year/day.

Yes! @glueandstick that’s exactly the soup I was describing as weirdly bland but very comforting! Love making a big batch of that.
I’ll share leek and potato recipe tomorrow. A friend gave it to me and I’ve made it like twice a month since!
