To ask for your cottage pie/shepherds pie recipes?

Inspired by the cottage pie threads tonight, please enlighten me!
I usually make the BBC recipe which is nice but I do feel I'd like more gravy (had never thought of adding/serving it with it).

I once put gravy granules in, which was quite nice.

Mine came from Delia originally, but I’ve forgotten the proper recipe over the years! Start by sweating off some chopped onions, carrots and parsnips (the original had swede I think but that goes too mushy for me). Remove from your pan, add the mince and brown it all nicely, seasoned. Dust over a couple of tablespoons of flour and stir it in, to take up the juices and thicken the mixture. Add the veg back, with a glass or so of red wine, and beef stock, which will start to thicken from the flour. Add some herbs (I use thyme, parsley and sometimes a spice too, usually sweet paprika), a squeeze of tomato purée, a very good shake of Worcester sauce, and plenty of black pepper. I sometimes add some frozen peas too. Let it simmer away till it’s nice and thick and flavourful. Make your mash and spread over the top in an ovenproof dish (cheesy mash makes a nice treat, if a sloppier mixture) and be sure to rough up the surface with a fork to get all those nice crispy bits. If you’re putting it straight in the oven, about 30 minutes should be enough to get the mash crispy and golden. If you’ve made it to this stage the day before and put it in the fridge, you’ll need to make sure the mince gets hot all the way through - 45 or 50 minutes should do it, but check the centre.

I add a large dollop of brown sauce in the meat mixture. Gives it a great tangy taste.

@Bunnylady54 I do baked beans too. And HP sauce. Sometimes bbq sauce if I do cheesy mash.

I like adding lentils - and lots of veg.
Frozen mashed potato for speed

Put quite frozen or chilled quorn mince in casserole dish.
Add herbs spices to taste.
Add fried onions,frozen peas.
Pour gravy over(bisto onion).
Add mash on top then grated cheese and put in oven.

I do a shepherds pie and a hp sauce and Worcestershire sauce and a Coleman's shepherds pie mix. X

The recipe I make (was my mums) is very basic.
Fry beef mince in oil, add a chopped onion - fry till meat is browned, onion translucent. Season with freshly ground black pepper.
Meanwhile peel & chop potatoes, bring to the boil & cook until soft. Drain & put them back in the saucepan.
Add a crumbled Beef Oxo cube to the mince & then several tsps of gravy granules. Add boiled water from kettle to reach desired consistency.
In the saucepan, add salted butter & milk - a little at a time - & mash the potatoes. Add some black pepper to season.
You can either serve now, or put the meat mixture in a tin/roasting pan, top with the mash & put in oven/under the grill.
Serve with more gravy & peas.

I always start off with a large onion chopped and put in olive oil until it looks almost browned
Chuck in the mince, stir and stir throughout cooking, when it's all browned chick in a beef jelly stock and a decent amount of pepper and a teaspoon of Italian mixed herbs.
Stir through until the jelly stock has dissolved.
Open up an ale, any ale will do (or any lager in a pinch!)
Add some gravy granules and turn the heat down fairly low.
Do your potatoes. Grate in half an onion, and a couple of spoonfuls of butter. Dont add milk, itll ruin the stiffness. I always whisk mine.

When mash is done, put in roughly a mug full of frozen peas in the meat mixture and pet heat through for a few minutes whilst you grate the most mature cheese you can find. I usually use about half a block of cheese. I like a really good crust onto of my pie.

The rest is the same as anyone else does I presume
Put it on for maybe 30 minutes
When you drag it out of the oven ot should have the crispiest cheesy layer on top.

Everyone says that my shepherds pie is the best they've ever had. =) I always use about 2kg of potatoes and 1kg of 5%mince in mine. Theres never any leftovers lol

I like sticking a can of adzuki beans and finely chopped mushrooms, carrots and onions in mine and putting marmite in as the stock. Then mustard and cheese in the mash.

My favourite is the hairy bikers cottage pie recipe. Maybe it's because it's DH that makes it so I've no cooking to do, anyway it's delicious. If I'm having leftovers and there's not a lot I'll have it with baked beans and sometimes some tomato sauce on the side.

I dry fry the mince,add chopped onions ,frozen veg ,gravy simmer until cooked through ,topped with mash potatoe ( I sometimes add crushed ready salted crisps to the mash and than put it all under the grill untill.browned on top

Finely dice onions, carrots and celery, sweat in a little oil. Remove and fry the mince until well browned. At this stage I sometimes drain the mince if it is fatty (I keep the oil/juices and refrigerate so the fat solidifies, scoop it off and add the meat juices back to the mixture). Mix the veg back in, add flour and bistro powder (NOT granules....yuck), add beef stock, simmer and adjust seasoning - salt, pepper and I usually add a little thyme. Add a can of beans. Simmer some more. Make mash - nothing added except salt and pepper. Put meat mixture in dish, top with mash, rough surface with fork, dot with butter, into oven for at least an hour.

I always use my mums recipe. I sweat off onions, garlic and ginger and then add the mince with some water, bring to a boil and then let it simmer until cooked. I add salt, pepper and some chilli powder as well as thyme. I will add veg whilst it is simmering and make a gravy to add to it. I then make the mash, add nutmeg. Top with cheese and then in the oven to brown. I usually have it with more gravy!
