AIBU to eat medium cooked pork fillet?

My DH is a fantastic cook, but I’m worried he might’ve accidentally just infected us with pig worms!

We’ve just finished eating a stuffed pork fillet (couldn’t see the colour) and a couple of bites before the end he said he’d tried cooking it ‘medium’ this time for a change!
He cooked it until the internal temp was 57 degrees.

I am far from pleased and we’re now in a disagreement about whether it’s ok to eat medium cooked pork.

YABU - Medium pork is fine
YANBU - No way! Pork should always be well done.

It’s fine , years ago I was out on a business so I. The states and the big boss ordered for the table (I know ...) anyway we all ended up with pork fillet that was rare in the middle , I politely ate around the edges and left this breast implant like piece on my plate - that was too much for me

I don't eat pork but I'd only ever eat red meat medium. Definitely needs to be well cooked!

I always thought pork had to be cooked right through. Like chicken?
Beef rare as possible and lamb pink duck pink too.

No, pork needs to be cooked to 75 degrees in the middle. The only reason you can cook steak just on the outside is because the bacteria will live on the surface and can be killed off during cooking.

I’m a rare steak, pink lamb well done chicken/pork girl normally. Hence my panic.

I’m sure we’ll all be fine, but not one I’ll want him to repeat (unless he cooks it well done as it was delish).

I didn’t think there was such a thing as “medium” pork.
I don’t eat pork but I’d imagine you could tell if it was undercooked by the way it tasted?

I’m sure you will be fine, maybe a tummy ache later.

I've just completed a module on meat hygiene. No bloody way should you eat it undercooked. Best of British OP Wink

Chef cooking temp for pork is between 57-63 degrees, which is medium. So your DH is in the low side of that. I think you’ll be fine. Well done pork isn’t worth eating imho, unless it’s in a casserole.

I'd say 57 is on the low side based on this and similar articles, but there is considerable weight behind the idea that you don't actually need to cremate pork to make it safe to eat. Have a read of results for 'cooking pork pink' on Google - not everyone agrees but it is definitely a Thing, your DH isn't just making it up. Personally I'd compromise at more like 65 degrees though Grin

Once upon a time (in the olden days) pig meat had to be well cooked.
These days, rare pork is a thing.

There is a push to serve pork pink now, as the biggest issue (trichinella I think us the proper name for pork worms) are no longer found in UK pig herds.
That said, if it's a rolled, stuffed, piece of pork, it needs to be properly cooked on all external surfaces, so needs to be cooked all the way through. Its only full joints that can be pink. Not ground/boned/rolled etc.

@PeterPanGoesWrong you say that but I know of someone who ate undercooked pork and while everyone else who ate it was sick as a dog, he wasn’t. He was smug. Until a year later when he had a seizure out of nowhere. Turned out he had a parasite from the pork which had worked its way into his brain. Everyone else had thrown their parasites up.

I wouldn't but apparently pork from quality butchers which has gone through proper testing can be done medium or medium well.

No one in the United States would cook pork to white/grey at a decent restaurant. Medium is just fine, and tastes much better.

There have been no pork-related parasite cases in the states for a long time, though, so look up your own data to learn whether it's valid in the UK!

Oh god this has brought back hideous childhood memories. My dad loved pork chops. But he was a shit cook. After my mum died when I was 10, obviously all cooking was left to him.

I got worms. I had them for YEARS (I was too embarrassed to say anything). They went away on their own after about 4 years. I didn’t make the connection until years later.

On our way up to the uk from Spain, we regularly stop at a place near Calais and they always ask how I would like my pork done! I always laugh lightly and say ' well done ' and they always snigger just a little bit! I don't mind lamb and beef rare but chicken and pork should be well done in my opinion.

My husband had pork cooked medium rare in a Michelin starred restaurant not long ago. He was fine, and I know that lots of chefs now feel that this is fine. I stuck with the fish though!
