I’m just wondering what others think this phrase means in a restaurant?
To me it’s “I’ve ordered something and there is nothing actually wrong with the food; I just don’t like it”.
It’s not “this is really not good and I am sending it back”.

Yeah it’s it’s not what I thought it was and I didn’t like it and as far as I’m concerned that’s your problem and you don’t send it back.

I think it could be either, someone might not be brave enough to say there was something wrong with it and so instead mask it as them just not being a fan.

I once sat in a noodle restaurant in London listening to a young woman at the next table call the server over and tell her that the noodle dish she ordered "just isn't....tasty. Can you make it more tasty?" The server looked baffled but took it away and brought it back a few minutes later. I assume it had been made tasty as the young woman didn't send it back a second time.

It's not my taste means there's nothing inherently wrong with it - it's just not to the person's taste - they just don't like it.

A bit like if you showed someone around a perfectly nice house for sale ; they might say it's great but I won't buy it as it's not to my taste
