Would you eat out of date cheese?

Today I found some out of date unopened cheddar cheese in our second fridge, use by date 24/12. It looked ok ish. I cut a few bits of mould off and used it Confused

Logically I reckon we'll be ok due to the maturing process however I'm having niggling doubts due to the Use By label..
Should I ditch the cheese straws I've just made? Would you eat it?

I cut the mould off if our cheddar isn't used before it goes blue, but sometimes there are little cracks in it and the mould gets in there so have to be careful.

I have some very old Stilton in the fridge, that needs to be mouldy and once it is out of the fridge and warmed up I am expecting to have to chase it before it gets away...

Does cheese come with a date? Some of ours is probably thinking of leaving home of its own accord.

Those dates are mostly for the manufacturer and retailer's own stock control.

Use your eyes and nose to check how it is. Any doubt, I'd ditch but if it looks and smells OK, the chances are it really is OK. Especially as PP said, once cooked.

Yeah I always do, just cut the mould off
