To share with you the best pasta sauce recipe ever

It's the most simple sauce ever and it's amazing!

Chop an onion super small (put in blender if you can until almost mush)

Fry for 3 mins

Add a finely chopped garlic clove

Fry for 2 mins

Add a tin of chopped tomatoes

Add 100mls water and a chicken stock cube

Stir

Cook for 10-30mins

Add handful chopped basil

Pepper to taste

done

Enjoy!!

I do this already but stock pits are better than stock cubes.
Pretty basic stuff

I find, with curry, the taste is significantly better if you use fresh spices and make your own paste (so starting with whole spices, not ground ones). Then fry the paste (but don’t let it burn) before adding onions etc. Also, using a few whole chillies, just sliced open in the middle, that you remove before serving, adds a nice depth of heat.

You also need a lot of salt to counterbalance the acidity of tomatoes (if using them).

I had a tin and used some for a Pakistani rice dish but then didn’t know how to store the rest- ghee.

Any tips for that?

@BarbaraofSeville i really just chuck stuff into the slowcoocker, leave it in for 20 hours, strain into a pot and reduce to quarter or less. Then freeze.
1 slowcooker, 1 strainer, 1 pot, 1 chopping board, 1 knife, spoons for tasting and whatever you portion it into to freeze. Not really a mess and ton of work, is it.
Works out cheap because I use bones and cheapest pieces of meat (as you should) bought in sale. Certainly doesn't taste like a dishwasher waterGrin.

@brightonroc good recipe, but my version leaves out the stock and just has a liberal helping of salt Grin We all have our preferences for tomato sauce, just tinker a bit to find your own!

SleepyReindeer I find the problem with shop-bought passata is that it has all kinds of gubbins added in - extra salt and sugar etc. So I buy plain tinned tomatoes and then whizz them up with a hand blender to make my own passata. But then I am contrary Grin

God what is it about recipes that bring out such miserable bastards!

Reminds me of when Jamie Oliver filmed in Italy, cooking for Italians—he had studied under Generro Wotshisname—many many many years ago.

This was before he became a ‘chilli bunging/everything with a twist’ chef, and as he served these people beautiful food the look of perpetual exasperation on his face when each dish was met with “very good, but not as good as Mamma used to make!” was a sight to behold.

OP, I’m excited anytime someone learns to cook, and experiments. I didn’t start properly trying until my mid-to-late 30s, so go for it and have fun.

Also got some very interesting ideas here. Hmm Grin

There's a very long backstory of my husband having cancer Sue which led to me being the breadwinner for the family until now in my 40s when I have had a second child and finally have some time to learn this stuff.

He was a trained chef so I never really cooked.

I guess everyone has a story!

Not that I didn't cook but it was either tinned pasta sauce or some shite I thought would taste nice and everyone would be polite but I knew it was crap!

We all really liked this one so I thought I'd share.

Looking forward to trying more stuff out but think I'll keep it to myself!

@Jellybeansincognito google the waitrose pea and paneer curry recipe.
I use that sauce now regardless of whether my curry is actually pea and paneer or is meat based. I struggled until I found this one.

Is the lemon for spaghetti sauce? Ive spent years trying to perfect my spaghetti sauce ,it always seems to come different everytime. If lemon is for spag sauce,how much do you recommend?
