To shudder at the phrase 'fry off the onions'

Is it real chef speak?

Does anyone else shudder when they read or hear this?

Fry off means to fry quickly, so in terms of catering it describes exactly what needs to be done.

It is real chef speak. My DD is a chef.

I didn't know it meant fast cooking. I worked out caramel onions means to cook them slowly.

The ‘off’ is superfluous. As the the ‘up’ in to train up. You’d hardly train someone down ffs.

It’s a chef term. Means as someone else mentioned to cook them quickly on a high heat.

There are a few ways of frying onions - slowly so they don't colour, browning them, caramelising them, sweating them etc. If a recipes says to fry them off I know exactly what they mean by it and how the onions should look so YABU.
