Hi,

I would like to make a cake or something nice for a friend who is on a very strict medical diet.
She can't have gluten, dairy, nuts or too much sugar (so not too much dries fruit etc).

I think that leaves me with eggs, oils, gluten-free flours and vegetables or fruit that's not too sweet?

Any suggestions?
I think it's the sugar bit that's stumping me as I'm not sure how to make it taste nice without too much sugar or sweet fruit...

I've used candarel instead of sugar in cakes before would that be ok? Maybe get her a bunch of flowers instead Flowers

you can get dairy free spreads for cooking. pure or vitalite maybe?

the rest I am still stuck on. maybe at a guess try searching for gluten free carrot cake recipes?

I'm assuming from that list she has developed a taste for savour food. Homemade sausage rolls ((Delia), pie, scones?

Hadn't thought about sweeteners, I will check with her...

I have dairy free marg and gluten free flour so can cope with those bits, it's the sugar that's stumping me! Confused

I like the idea of scones, but I've not done gluten free ones... I wanted to try a cake as I think that's what she misses out on the most.

This cake is delicious. It’s uses coconut sugar and maple syrup, both of which you could cut back on quite easily I think. I would add a small pinch of salt and some instant coffee powder (decaf if she can’t have caffeine).

You can skip the frosting and just grate dark unsweetened chocolate over it.

Google vegan and gluten free recipes. Tbh if found gf flour tends to be sweet (think its rice based). So if found I need to use much less sugar. I prefer flora dairy free to bake with. Had some success with egg substitute.

Tesco's free from brownie mix isn't bad. Some.of the premade free from cakes are lovely. You might be better with that and some flowers. M&S range are very nice

Banana bread made with gf flour is good. As possible said, gf flour is a sweeter taste anyway. You can add a little bit of coconut sugar or honey if needed but won't need too much.

Total Sweet is an excellent sugar alternative and the only one I know that has absolutely no artificial taste to it.

But please bear in mind that Xylitol is 100% deadly to dogs.

Banana bread sounds a good idea.

I will try the Total Sweet, I haven't tried any kind of artificial sweetener before so I'm a bit nervous as I hate the artificial taste in some drinks.

Erythritol is the best sweetener for baking imo. Or xylitol (but not if she has a dog - it's lethal to them).

Maple syrup, honey etc are still pure sugar.

As it every other sweetener (fruit included) that isn’t manmade. I didn’t say it wasn’t a sugar, I just gave an option of a cake that may work for op.

I have to eat gf OP and I use the basic BBC scone recipe, but use Doves Farm flour and form 6 big scones (make tennis ball shapes) instead of 12 that would normally 'rise' in the oven. They're excellent and way less claggy than a normal scone can be :)
