I've bought too many potatoes. Send help, please.

I'm not sure how this has happend, but I've ended up with too many potatoes. I bought a kilo of baby pots on Sunday, and last night bought an absolutely massive pack from the Waitrose clearance shelf. For 10p.
It seemed like a good idea at the time.

For context, there are two people living in this house. Myself and 11 yr old ds.

I need urgent help dealing with these potatoes. Please, send help. Or, at the very least, easy recipes to help me use them up.

PS. Tales of over enthusiastic food buying also most welcome.

A fish pie or cottage pie for 4 people can easily use 1kg potatoes so you make onf each, then eat some and freeze some. Presumably the big bag from Waitrose is 2.5kg so you could make some chips or wedges with the rest.

The make this with the new pots (don't peel, obviously) and freeze in portions.

Seriously though I think I'd make a big batch of leek and potato soup, loads of roasties and let the kids live off chips mash!

My first forays into online supermarket shopping years ago saw me ordering 10 bags of satsumas. Tesco rang to check that I realy wanted 100 of the blasted things as there were 10 to a bag.

I impulse bought a 7.25kg 5 litre bottle of golden syrup. Still no idea what I’m going to do with it all. It was an absolute bargain though.

Make a fish pie, it requires a lot of mashed potato. I find mash uses the most potatoes. Have roasted ones the next day, then sausage and mash. Keep the potatoes somewhere cool and dark, they should last a month.

I've done the opposite, instead of expecting 100g of button mushrooms to arrive with my online shop, one tiny, single little mushroom arrived in a giant paper bag. That was embarrassing...

Potato curry
cut them into chips, toss them in oil, salt, pepper and paprika and put in the oven for 30 mins, no need to par boil. Best chips ever

Was the massive pack aslo baby pots? We have loads at the moment. Im boiling them all tonight and having some for dinner then tomorrow I will roast the remaining ones in olive oil & herbs. I did the same last week when I also managed to buy a huge bag.

Edible Play Dough

Homemade slime and kinetic sand are all the rage these days… why not try mash potato play dough for another unique sensory experience? (Though technically edible, we never promised it would taste good.)

1.Bake 5-6 potatoes and allow to cool.
2.Remove the skins.
3.Mash the potatoes. Let the kids to help!
4.Add around 3/4 cup of flour for every 1 cup of mashed potatoes. 
  1. Add the flour gradually kneading the dough as you go. The more you knead the dough, the more malleable/less sticky it will become. 6. Add a few drops of food coloring as you knead to experiment with different colors.

6 down, 24,000 to go!

Another vote for mash 'em and freeze! You can do different flavour mashes like cheddar or mustard or horseradish.

My parents always buy a sack of potatoes, delivered by the ‘potato man’. Just keep them in a dark place and they will be fine.

Bombay potatoes are nice though.

Thanks to all the kind folks on here who have shared their tips and recipes with me, so far I've:

  1. Stored the potatoes in a cotton bag with newspaper over, and put it in a cool dark storeroom.
  1. Cooked roast potatoes from one pp's recipe.
  1. Made creamy cheesy mash and used to top mince tacos.
  1. Made a big pot of mince with potato chunks to use as pastry filling tomorrow.
  1. Laughed out loud at stories of buying too much, or even too little (single mushroom, anyone?)

Suffice to say, my eyes have been opened to a whole new world of potato recipes. I'm planning to make the breakfast boxty sometime this week. I've never heard of it till now, but sounds amazing.
