What to give a vegetarian on a "whole food" diet for lunch?

I'm struggling a bit.

This friend has had some serious health problems and this diet seems to be helping him.

He's coming for lunch at the weekend and I want to make him something nice. He is lovely and would bring his own food. Not at all demanding or fussy.

As I am neither vegetarian, nor am I on a whole food diet, I'm a little clueless!

Any ideas much appreciated.

You’d be amazed what some people think is veggie. Bacon being something I was offered recently. Hmmm so what type of veg is a piggy then?

Can you make dolmades? Not difficult but laborious - really worth the taste thought this. Yum.

Love the mezze and dolmades idea. Maybe I could... just buy them though 😂. I don't know where I'd buy vine leaves for a start. I can make hummus though and taboulleh. I'm sure I could manage Baba ganoush as well. Could do potatoes instead of bread.

Yummmmm. I get my vibe leaves from a local Greek store but I’m sure I’ve seen them in my Waitrose.

I follow Rachel Ama on IG and I've got her new recipe book. I'm planning to try this recipe (minus the peanuts) next week looks yummy and easy to cook:

I missed the vegetarian thing - I thought it was whole food which would include lean animal protein and cheese- but lots of these dishes work with or without animal protein so you can mix and match for a mixed audience. No biggy. People are just trying to help here.

Oh bloody hell its in the title! Silly me. But what I said before stabds. Grain salads are great for throwing in all manner of stuff and a delicious punchy dressing can bind togeyher and make yummy even the simplest and blandest of ingredients. Great for fridge clearance or emergency dinners too!

You can get veggie ‘Parmesan’. It’s fine.

You can get veggie similar style cheese to Parmesan but I think Parmesan is a protected product like champagne and must be made a specific way with rennet.

I thought vegetarians could eat dairy and eggs, it was vegans who didn't? Have I missed something?

Vegetarians can eat dairy and eggs. Some dairy like Parmesan isn’t vegetarian though unfortunately. Parmesan is made with rennet which comes from animals stomach lining.

Funnily enough, I saw Rachel Ama on This Morning on Tuesday! She made sweet potato stew with peanut butter. Maybe I could make that... It looked amazing. She's great.

Other thoughts were maybe aubergine cheesy bake or lentil moussaka...?
