We were going to get a takeaway tonight but I have a few hours and a free house this afternoon so might attempt to make one instead! Veggie or meat- what are your best recipes?

Watching with interest. I really want to find a recipe and instructions on how to make a curry exactly like the ones you get from an Indian restaurant.

It’s about £3 at the moment, and the recipes are great! I’ve ditched loads of takeouts now in favour of making my own.

I second maunika gowardhan butter chicken. It’s fantastic. I just make it with a whole chicken cut into pieces and forget the honey coz I don’t like sweetness in my savoury food.

The key to a good curry is browning the onions properly - which can take some time and cooking the tomatoes out (if there is toms in the curry obvs) so the oil comes to the top.

The best one I ever found was in a book called 'The Takeaway Secret'. It basically taught you to make a base curry to which you'd then add ingredients later to make various different varieties.

It made a lot of base, which I froze in takeaway tubs and then made probably the best Tikkas and Kormas ever. Its an effort to make and blend the base, but it lasts ages so its worth it.

It also taught me to make sausage and egg mcmuffins, sweet and sour chicken and no end of other stuff.

I make the Hairy Dieters Vegetable Dhal from their fast food book which has sweet potato and red lentils it's very tasty, though you do need a pressure cooker though you could cook on the hob instead I would think.

Mamtas kitchen is my go to website for curry recipes, everyone's a winner.

Purée your onions rather than chop is my best tip with any curry wether they say to or not

I have yet to find a duff recipe. Not takeaway style cooking, but authentic Indian cooking. It started as a blog that family members could access when they moved out of home.

My step-father-in-law is from Delhi, and used to be a chef in an Indian restaurant in my hometown!! He modified his restaurant’s tikka masala recipe for my CMPA child - it’s beautiful Grin
Best curry outside of a proper takeaway/restaurant job I’ve ever had! Happy to share if anyone wants it Smile
