To ask - can you brainstorm some meals with me?

Another thread about meals but...

Basically, I'm starting from scratch ready to start meal planning again.

Right now, I'm about to start typing a document of all meals I can think of (including simple, lazy ones) - under categories breakfast, lunch, tea, snacks!

Can anyone help me out just by brainstorming ideas under these categories so I can just make my list as long as possible and then can meal plan off there?

(Yep, it's a boring bank holiday!)

Having a complete mind block and can only think of your regular spaghetti bolognese, soup, sandwiches, cereal/toast etc... definitely bank holiday brain!

Dinner:
Pasta with roasted peppers and onions with pesto;
Chicken and veg (pepper, onion, sweet potato, spinach) curry...I use half a jar of pataks mild curry paste and a tin of coconut milk. Sub cauliflower for chicken if veggie; Serve with rice and naan;
Whole chicken in the slow cooker, 6 hours, serve with big salad and crusty bread.

I'm always at a loss for lunches during half term, so I'll watch this thread with interest!

The Good Food site is excellent as you can search by these categories and also many others (eg veggie etc). Can also recommend the Yummly app as you can put in what ingredients you have (and the ones you hate!) and it searches the whole internet for meals to match. I've tried a few nice things from that.

My meal list is less around meal times and more around 'core' item - eg pasta based, rice based, 'special effort'. I found it easier to categories that way

Our main meals at the moment are:
Chilli beef wraps (with creme fraiche and spring onions and cheese)
Chicken fajitas
Quinoa, roast veg and halloumi salad
Pasta pesto with bacon and veg
Vegetable curry (chickpeas, onions and sweet potatoes)
Roast dinner
Roast salmon with veg (brocolli and sweetcorn)
Chicken caesar salad

Overnight oats with fruits are great for breakfast. No faff in a morning.

I make my own chinese shredded duck. Pop a duck in slowcooker. Proerly rubbed with 5 spice, salt and pepper inside and out and leave it for 6 hours. Then half goes into a freezer for next time and half goes into an oven to crisp up. Keep some juice from the slowcooker to mix with meat after it's shredded. It adds extra flavour. With the pancakes, cucumber, spring onion and hoison it works out like £2 a portion unlike tenner for premade from shops. Normal duck is bigger than the ones in premade boxes so 1 half comfortably feeds 2.

If you have ASDA nearby they have the summer magazine out with lovely middle eastern meals and snacks.

Quishe is great and can be frozen. Just serve with side salad.

That duck sounds amazing! Might give it a go. I’m stuck in a rut at the moment but some ideas..

  • Meal plan for a month (stay with me..)
  • Have a ‘theme’ for each night e.g. ‘Mexican or meatless Monday’ so you choose four Monday meals based on the category.
  • I like the idea of ‘tried and true Thursday’ (as I’m normally knackered come Thursday) where you choose an old favourite you can cook with your eyes closed e.g. spag bol (mentioned on every MN meal planning thread ever Grin), fish pie etc do you’re only having it once a month as opposed to once a week.
  • Friday easy dinner alternate between homemade pizza, burgers, fish and chips or have a fish based meal every Friday (or whatever day suits) and alternate the sides.
  • You only need 31 meals and you’re only having something once a month.

Porridge
Beans on toast
Kedgeree
Healthy fry up- grilled Linda McCartney sausages, scrambled eggs, beans, spinach, grilled tomato

Lunch:
Chicken fajitas
Ryvita and chopped tomatoes (healthy and easy bruschetta!)
Beans on toast
Hummus and cut-up cucumber, carrots, etc

Tea:
Chilli con carne
Linda McCartney sausages and quinoa
Daal (lentils and turmeric basically!)
Green or red Thai curry and rice (use a paste and coconut milk)
Indian curry
Stir fry
Tortellini and pasta sauce
Homemade meatballs in a salad
Homemade beefburgers
Homemade pizza

Snacks:
Raisins
Coconut and vanilla yoghurt pots
Soya chocolate pots
Sunflower and pumpkins seeds
Almonds and walnuts

I do meal prep every Sunday for the week.

Have you thought of setting up a Pinterest board. I find this very helpful. I make my menu weekly from it and then I have a very targeted shopping list as well.

There are so many excellent ideas!

Breakfast I like over night oats, but DH and DC will either have weetabix, porridge, mini shreddies topped with fresh fruit, toast and peanut butter or fresh fruit and plain yoghurt.

Packed Lunch for me is a bean stew or soup. Both of which I make a huge batch of on a sunday. I just add veg/ salad to stew and protein e.g. Deli meat/ egg or tuna. With a piece of fresh fruit.

Children's Lunches I make up a batch of Wm sandwiches/ wraps on a Sunday and freeze. Just chop salad or veg to add in each day. Or I make batch of rice and veg that keeps in fridge for 3 days.

Dinners I meal plan Sunday to Sunday are on usually on these lines

Yesterday Cottage pie, veg, bread and butter pudding.

Today Minced kheema curry, veg, rice, poppadoms and stewed apple.

Tuesday Fish pie and strawberries and vanilla ice cream.

Wed Home made fish cakes, home made potato wedges, green beans and quick fruit crumble.

Thursday Chicken and Veg enchiladas and fruit salad

Fri Chicken and pasta bake with salad and home made fruit ice lollies.

Sat we order a take away or eat out. The children can choose what and where they want their dinner from. E.g. Mcdonalds, Pizza Express. Followed by sweets or crisps later on for children and cheesecake or luxe ice cream for us. Saturday is 'junk food' dinner day.

Sun. Roast topside of beef and all trimmings in slow cooker and strawberry truffle.
