Steak and salad
Stir fry
ricotta fritters
Fajita
Lots of pasta dishes
Menemen (Turkish omelet dish)

Unescorted · 21/05/2019 22:35

Spaghetti dishes - carbonara, pesto, lemon basil & parmesan, broccoli, cream and chilli, spinach and ricotta, mascarpone and tomato,

Any stir fry with straight to wok noodles - beef and oyster sauce, sweet & sour (without the crispy egg & corn flour coating), ginger & spring onion.

Lamb and cous cous with lemon & parsley

Chips and fried chicken, steak, pork, fish/ sausages plus random green vege / salad / baked beans combo.

Oysterbabe · 21/05/2019 22:41

I have to do this 3 times a week. We use the slow cooker a lot. Curry, stew or bolognaise then I just cook pasta, rice or microwave mash with some frozen veg.

MangoFeverDream · 21/05/2019 22:46

Asian-style noodles (stir-fry fav veggies and sauces with prepared noodle of your choice)

Grilled salmon and sautéed veggies, usually broccoli or baby asparagus. Cook veggies while salted and oiled salmon cooks for 10 minutes

Homemade mac and cheese can be done in fifteen if you prep the cheese sauce while the macaroni cooks

We're doing the big shop Friday so I'm having to be creative! Tonight I chucked mince, onion, cumin, garlic, lemon juice, passata, cauliflower, courgettes, green beans and basmati rice in the wok, cooked til mince was brown, added a small amount of water and boiled furiously until rice was cooked and liquid absorbed. Dunno what it was but it was bloody lovely!

stucknoue · 21/05/2019 22:56

Pasta, cous cous, rice, chickpea curry, fajitas, enchiladas,

stucknoue · 21/05/2019 22:58

Oh and noodles with stir fry veg and salmon.

Go-to quick dinner for us is pasta and red pesto, with tinned mackerel stirred through. I will admit this might not be every child's taste!

For quick dinners I don't worry about veg. When we've got more time is when we'll have (for example tonight) grilled halloumi wraps with salad and rice. Or - current fave - chicken and sweet potatoes roasted in one pan with chorizo, then served in wraps with salad. Alternative roast dinner, and actually gets a lot more veg in them than normal roast dinners.

As yours don't eat salad, I'd not worry about those nights you really need something on the table quick, and just ensure they have something another time. Only one of mine has school dinners and I'm reasonably certain he eats everything - my other two don't so some days they don't have veg or fruit at all. Partly this is because if we have fruit in the house they'll eat it like a plague of locusts so it's all gone in a day!

I forgot one.

tom yum soup pho ramen basterdisation

Boil kettle
Chop an onion in half moons and fry
Meanwhile roughly chop mushrooms and add and fry a bit
Add boiling water and Tom yum paste
Simmer
EITHER cook flat rice noodles, OR use the straight to wok ones. Second is quicker but first is nicer.
Roughly chop pak choi and add to the soup
Shred up some shop bought roast chicken.you don’t need much per person. Add to the soup for a little bit to heat up.

Put the noodles into big bowls.
Ladle the soup on top.
Top with bean sprouts and Thai basil, mint and coriander and if you had time some thinly sliced red chilli.

Seriously tasty this one.

Adreamaday · 21/05/2019 23:17

My favourites -
baguette filled with tuna and cheese toasted under the grill
Pasta and a tomato or pesto sauce from a jar.
Chicken and egg fried rice (use microwave rice)
Stir fry
Omelette
oven pizzas
vegi sausages and frozen mash

Serve with salad or microwave the veg.

BlackPrism · 21/05/2019 23:45

Pan seared soy salmon with mango salad

Steak and new potatoes

Pasta and quorn ragu

Fajitas with guacamole

Loads of things tbh

Boffing · 22/05/2019 02:58

There's a massive jack of vegetables in these replies ...

Curious about spat bol coming up several times. How in 15m???

Zoflorabore · 22/05/2019 04:51

Ds and I are doing SW and my cooking skills have dramatically improved over the last year and I'm pretty confident now.

We use a slimming site called "slimming eats" which is amazing and has meals that are "free" on the plan or very low fat.

This one I made last night and took 15 ish minutes. It's called pizza chicken.

Take 2 ( per person ) chicken breasts and put in a ziplock bag and flatten a bit with a tenderiser or a hammer Blush

Season with sea salt and cracked black pepper and cook on hob for 2 minutes on each side.

Use a mixture of 300ml passata, dried oregano, basil, garlic and a bit of purée and mix in a bowl and then cover the chicken with it, like a pizza base.

Add cheese of choice, we used mozzarella but also use cheddar.

Can also put extra toppings on such as mushrooms/onions/peppers/sweet corn etc.
Oven proof dish and in oven for 12-15 minutes and done.

Served with jacket potatoes ( micro ones ) and salad of choice.

We really enjoyed it and will be making this one again soon.

maddiemookins16mum · 22/05/2019 04:51

Grilled chicken breasts (that I had coated lightly in garlic olive oil and 5 spice and marinated in the fridge all day) with noodles and extra veg. This was our tea last night, took less than 20 mins.

KneelJustKneel · 22/05/2019 05:28

Following to read later.

I dont think you can routinwly make a nitritious meal in 15mins... but o have a real lack of executive function so being able to would be helpful!

Also days where we have activities..

Reheating a precookdd chilli with some microwave rice and boiled veg?

We sometimes do veg sticks raw/raw frozen peas as the kids will eat it.

Oysterbabe · 22/05/2019 05:37

Curious about spat bol coming up several times. How in 15m???

Slow cooker. We're having it tonight and I'm about to put it on.

KneelJustKneel · 22/05/2019 05:39

Im pretty sure most veg is not eaten in school dinners/is of dubious quality/and is a small portion... around here anyway!

MangoFeverDream · 22/05/2019 07:21

That said, hard to do (good) veggies in 15 minutes unless you have a gas-fired stove, as stir-fry tends to taste soggy on electric hobs ime. Sauté is better if you don’t have one. Also, if you gave us 30 minutes ....

flumpybear · 22/05/2019 08:12

Not RTFT but get a slow cooker

This morning it took me 5 minutes: added pre-made meatballs, passata, bit of red wine, garlic, chopped onions, stick in mushrooms if you like them and herbs - lid on- slow cook all day then make spaghetti or rice etc when you get home

Do the same with chicken, stock, carrots, onions, chillis and white wine if you like it

Also chicken, cream, stock, white wine (there's a theme emerging here!), tarragon

Literally takes 5 mins to prepare and cooks for you all day

Mistigri · 22/05/2019 12:48

I could probably just about do a prawn or chicken stir fried rice from scratch in 15 mins, using basmati rice which cooks in less than 15 mins, and frozen stirfry veg.

And maybe chicken curry using an instant-pot type pressure cooker - 2 mins to chop and fry some onion and spices, 3 mins to get to pressure, 10 mins cooking time. Basmati rice as above.

Chilli con carne and bolognaise sauce only take 15-20 mins in the pressure cooker assuming I use frozen ready chopped veg (which I generally do because I am a very lazy cook).
