Frozen veggies thread - recipes please?

As an addendum to the 'frozen veggies are the best thing ever' thread, could I please ask you for your failsafe easy, tasty and healthy midweek recipes please? (My mum is coming for 10 days and my cupboard is bare... going to do a shop once baby ds wakes up.)

In return, please have my latest discovery... this slatted side of the grater (possibly called a mandoline) can prep a courgette, red cabbage and carrots in literally 30 seconds, with no chopping required. Very handy altogether!

Chunky bacon and veg soup

Soften onions (frozen of course) and garlic (also frozen) in the bottom of a big pan with oil. You could include carrots here too if you wanted.

Cook some bacon separately using your method of choice.

Add two ham stock cubes and fill pan with boiling water. Add bacon. Simmer for a bit then add whatever frozen veg you like. Cabbage is nice as the main veg.

Add pasta. Serve when pasta is cooked.

I have a bung in the oven jobby that I'll use when I'm down to my bare bones ingredients. It has no name though.

Chicken/pork/whatever meat or fish you've got lying around cut into chunks.
Put in dish.
On top, whack a tin of chopped tomatoes and a crap load of frozen veg as well as onions and garlic. A veg or chicken stock cube. Some oregano or mixed herbs if its chicken. Sage if its pork. Grated cheese on top and bung in the oven.

Can serve with rice, pasta or potatoes so Its quite versatile. Plus you can change it around with different herbs and different veg so it's not the same dish every time.

Frozen spinach and peas: make risotto.
Also add the spinach to curry at the end.
Pea purée, cook, stick in food processor with spring onions, butter and mint. Serve with fish. Use more peas than you think you'd need.
