One pot inspiration please!

I've got into a rut of cooking the same old stuff..spag bol, shepherds pies, chilli, stir fry's. I like making a sauce type thing to go with pasta/rice. Something that I can stretch out over two nights is a bonus to save me cooking the next day!

Soo bored of it now, please give me more ideas to stop us getting food boredom.

Chorizo (sliced thinly or chopped small) sauteed with onions, garlic and red peppers. Add some stewing steak, leeks, sliced carrots. Good splosh of passata or a tin of chopped tomatoes, some red wine, 2 oxo cubes. Stir, heat til it bubbles then reduce heat, put a lid on and leave to stew for at least an hour, possibly longer, til the beef is melt-in-the-mouth. Day 1 serve half of it with potatoes and a side of steamed greens. I like (cheesy) mash but jacket, boiled, roast or chips also work.

Keep the other half in the fridge then for day 2 add water and some extra root veg (parsnips, small chunks of potato, parsnip, swede, more carrots) and cook for about 30 mins. Add a good dollop of philadelphia cheese or mascarpone, stir til it's melted then whizz in a blender. Voila, yummy soup! Serve with crusty bread or garlic bread.

Slow cooked gammon, it’s dead easy. Fry some onions, tip them in the slow cooker with some casserole veg. Put the gammon on top and pour in some stock until it almost covers it. Cook for about 6 hours.

Butternut squash baked risotto. There are lots of recipes online but the Waitrose one I know is good. Takes about 20 mins prep (mostly peeling and chopping the squash) but then you just bung it in the oven. Easily feeds four.

The roasting tin cookbook is great for ‘one tray’ meals which make a change from ‘on pot’ meals.

One pot/tray is my kind of cooking!

Curries are good. Thai red/green for something different? Make up a big batch of paste and freeze it in ice cube containers. Use 1-2 cubes a time, then add chicken pieces, coconut milk, stock, fish sauce to taste and keffir lime leaves (or squeeze a bit of lime juice). Cook for 20 mins then add fresh veggies - babycorn, green beans, etc
