Oven free and needing inspiration!

Help!

Will be oven-free for two weeks.

Need meal inspiration - other than pasta, chilli, omelettes and curries what healthy meals can I make?

My mind is totally blank!

You can poach fish, boil, steam or stir fry vegetables. Won't hurt to have beans on toast one night!

You could make up some baked stuff now and freeze it to reheat in microwave? Other than that, stir fry, salads, fajitas, soup, meatballs, burgers, risotto, gnocchi, wraps, fritters, noodles, stew. I’m assuming you have a hob? I feel your pain, I was recently without a kitchen for a couple of weeks as we moved the kitchen from back of house to front.

Cook now and freeze. I was oven and job free for 2 months. It was not fun.
Also microwave rice with defrosted stuff

I rarely use my oven, cook mostly on the hob but we eat A LOT of chicken and rice/fajitas or similar. Am I right in thinking you can sort of slow cook with a big pot on the hob with lowest heat? (Although obviously not to the extent of swanning off out for the day and leaving it on!) I buy already cooked chickens quite a lot and have with pasta/rice!

We only use the oven a couple of times a week, so you'd have thought I'd be able to think of something other than what's already been said. Umm, Chorizo beany stew: chorizo cut into discs and dry fried, add garlic, then a couple of tins of tomatoes and let simmer for half an hour, then add tinned chickpeas or beans for final five minutes.

Spanish omelette with whatever veg and cheese you like in the mix. Paella. Kedgeree. Deconstructed cottage pie (otherwise known as minced beef and mash.) Griddled or steamed salmon.

Stove top only?

Stir fries with lots of veg - can mix up different types of meats/fish, and use rice or noodles, and different sauces, to make it interesting.

Pasta with:
Bolognaise sauce
Pesto (basil or sun dried tomato)
Tomato sauce and bacon pieces and mushrooms
Cheese sauce and bacon pieces and lost of mixed veg
Wine/cream sauce with chicken and mushrooms
Clams or mussels and some cream or just garlic and oil
....

Rice with:
Beef or vegetable chilli
Lamb rogan josh
Chicken tikka masala
Butter chicken
Salmon korma
Vegetarian curry with tinned chick peas, some diced veg, tin of coconut milk and some curry paste
Sweet'n'sour chicken/prawns/vegetables...
Thai green or red curry
Wine/cream sauce with chicken and mushrooms (works well with both rice and pasta)

Mashed or boiled potatoes (or HM chips) with
A chop and some boiled veg
Fried steak, onions and mushrooms
Mince beef and onion gravy
Sausages and fried onions
Fried egg, rasher, sausage
Grilled chicken and mixed stirfry veggies
Grilled fish fingers
Fried/grilled chicken in breadcrumbs
Boiled veg or steamed veg
Cauliflower and cheese sauce

Fish cakes fried in a pan

Pancakes with a savoury filling

Or just salads some nights, or other cold stuff

On the way home, buy a deli chicken (still hot), a loaf of crusty bread and a tub of good coleslaw for crusty chicken sandwiches

Pork chops or steaks, browned on each side. Remove then fry onions/garlic and slices of apple. Put pork back in and add cider/wine then simmer for a bit and serve with rice or spuds. You can add cream if you want to posh it up a bit. Or similar with lamb steaks, red pepper, tinned tomatoes (forget the apple and wine) and chopped dried apricots. Goes nicely with couscous.
