AIBU to ask for your baking disasters? Just butchered buttercream

been feeling crappy and thought I’d do some backing as I find it cathartic
Simple sponge with buttercream
Except the sponge burnt around the outside and despite following the recipe exactly and using a mixer, the buttercream icing had lumps of butter in it 😂
Turns out it wasn’t so cathartic after all

If Countrylife spreadable is anything like Lurpack spreadable then it's pretty much butter in my book for a lot of baking. Just not for things like pastry when you need butter to be hard.

I once made a birthday cake for DH and it collapsed in the middle (figured out after a few more disasters that the oven thermostat was way off). I was pregnant and I sobbed hysterically for hours 🙈

I made banana bread last week. It's a great recipe, made it loads of times before. I weighed the flour out and I thought that it didn't look like as much as usual but didn't think much of it.

Peeked in the oven after about 30 minutes and it had pretty much exploded all over the floor of the oven and then sunk into the tin where it stubbornly refused to cook through despite cooking for ages.

I scraped it off the oven and it actually tasted amazing. I think I might try it again to make cookie splodge-type things. The kids ate the cake itself, so at least it didn't go to waste.

Making cupcakes for a school bakesale. I was using a new recipe that had cake batter that was runny. I thought it looked odd, but I did exactly what the recipe said.
It rose well, then immediately sank. I didn't have time to do another baking run so I just piped on a tonne of buttercream and decorated with jelly tots. Apparently they sold well.

I made what would have been a lovely chocolate fudge cake. It was in the oven for longer than the recipe said. A skewer came out clean. Instinct said it wasn't done, but the skewer said otherwise.
When it had cooled, I released the spring clip on the cake tin and promptly flooded my work top with a thick soup of uncooked cake.
Suffice to say I took my frustration out on the lying skewer.

I once made a carrot cake and forgot to add sugar. It didn’t turn out well.

Also made orange barley water with salt instead of sugar. Not good.

And made chocolate mousse with rum. Used tablespoons of rum instead of teaspoons. I could have got a job as a fire eater afterwards!

Your butter was too cold. Might have been able to rescue it by warming it up slightly and remixing.

Redpandafluff, are bicarbonate of soda and baking powder not the same thingShock?? This may explain a lot to me. I have had myself typecast as a crap baker for years, I will go shopping and report back.

Cremated shortbread biscuits in my mums super hot range master oven Blush. It's fine with everything else but it kills shortbread.

My butter icing cheat is to make crumble crumbs with the butter & the icing sugar, then I add a couple of drops of milk and whisk until it's butter icing.

I once made a chocolate cake for a friend’s birthday but was running out of time and couldn’t wait for the ganache to properly cool and thicken. I slathered it all over, and it promptly slipped. I still gave her the cake presented in a pool of chocolate sauce.

A few days ago I tried to make treat muffins for my gluten and dairy sensitive toddler. I wanted them healthy too so used maple syrup but didn’t have the amount the recipe called for. He was excited when he saw them but made a face when he tried them. Raspberry rye muffins with dark chocolate and not enough maple syrup and grassy olive oil instead of butter- what’s not to like!?

@Hohofortherobbers - nope, one of them has to be used in acidic recipes, or it will taste tangy and bitter. As I found out when I made a sponge with the wrong one . . . which looked great but tasted sour and fizzy!

Birthday cake so bad that 2 year olds wouldn't eat it.
Scones for my mums cake business that didn't rise and resulted in a complaint
Rock hard bread until i started using the bread machine to do the kneading
Custard that always ends up as sweet scrambled eggs
Many many many bad cakes/ brownies /burnt cookies

Impatience, wrong ingredients, wrong sized tins, not following recipes properly, complacency, oven with no seal...my baking is a lesson in how not to do it

I screwed up buttercream last week. even tried sieving the mix to get rid of the butter bits. Ended up using my emergency Betty Crocker tub...

I cheat with buttercream, I use Marg and add some butter flavouring! whips easy, no lumps, no waiting for it to warm up and the frosting stays soft - Sometimes I add Trex in place of some butter if I need a lighter colour.

and ALWAYS sieve the icing sugar!

DC and I made blondies. Put them in the oven and Dc cleared off leaving me to clear up. I promptly wiped down the surfaces and, safety conscious as ever, switched off the oven.
When the timer went off we had lukewarm mush.
