To ask what you eat for lunch

I always struggle to eat lunch. Nothing inspires me at all. I’m wheat/gluten intolerant so a quick sandwich isn’t an option, and gluten free bread is vile. I don’t mind cooking something that takes 10 minutes. Any longer than that and I just don’t have time. I work from home

Roast loads of vegetables, then add beaten egg, and ta-dah, frittata!

It takes a while in the oven obviously, but not masses of time to prep.

You could do a big one on Monday and eat it cold during the week.

These are what I have, although I appreciate lots are not gluten free -
Ainsley cous cous with salad
Scrambled eggs with toast
Avocado on toast or crackers
Crackers, cheese and grapes (a mini cheeseboard)
Houmous, various things to dip in
Smoked salmon and cream cheese bagel
Pasta with garlic butter, fresh basil, tomatoes and mozzarella
Soup & crackers
Cold chicken with salad

I have carrot batons with hummus then Greek yoghurt and fruit. Fills me up for the rest of the afternoon!

I'm lazy and just make lots of my evening meal so I have leftovers to take to work

I make a batch of egg muffin cups. You can put anything you want in the tub cups before you pour in the egg mixture. Veg, cheese, pre-cooked meat like sausage or bacon. The best part is that they keep for days in the fridge and all you have to do is pop them in the microwave for 30 seconds to hear them up. I also like to make soups and lasagna which I then freeze in individual sized portions.

Gluten free pasta either warm with a gf sauce or cold with some salad and ham or tuna. Gf pasta is nice I can't tell the difference between that and normal. Have you tried the warburtons gf bread? That's actually pretty decent compared to the rest of them and the other thing is to try making it into a toasted sandwich instead. A lot of people say they enjoy it better that way. I really like the Schar gf cracker breads. They're a bit more crunchier than the normal ones but they're still nice.

Chicken breast with mashed avocado spread on the top. Or hummus on top.
Salad of rocket, walnut and Parmesan with it.
DH had a cheese, mushroom and chorizo omelette but I like a bit of veg in my omelettes so would have onions or peppers in there too if it were me.

This week im batch cooking quorn sausage and sweet potato tray bake. I just whack it all in the oven along with peppers, mushrooms and red onion and smother it in balsamic glaze. I will reheat at work and sprinkle on some feta cheese.

I usually make a big pan of soup and take a flask into work for lunch or, if my evening meal lends itself to leftovers, I will make extra and take that in - things like paella, noodles, chilli. Failing that, the canteen at work has a really good salad bar so I will get a tuna or chicken salad.

with access to a microwave pre cooked jacket potatoe and baked beans or cheese takes one or two minutes to reheat
a flask of chunky soup
chilli and rice in a tupperware container 2 mins to reheat
GF pasta and sauce or vegetables

There are lots of other recipes out there, too. Some use a bit of milk or cream in the egg mixture, which I add sometimes, too. They are so ridiculously easy!

Leftover dinners--chilli, curry, casseroles etc. Buy uncle Ben's rice packs. 2 minutes and sorted.
Aldis/asda high protein frozen ready meals
Soups from gf range
Salmon, avo and toast (have you tried tesco tiger bread- it's actually quite good and this is from a bread loving celiac)
Jacket potato, tuna and mayo
Ocassionally John West salmon/tuna tins when on offer

I buy the Itsu cup noodles when on offer at £1- a bit of an indulgence but really tasty and gluten free.
