Posting for traffic!

Really been struggling lately with meal ideas. Seem to be having either rice or pasta, with chicken, veg and a sauce from a jar and I’m a bit fed up with it all. Looking for people’s favourite easy but tasty dinner ideas which don’t cost too much to make. I’ve had a look a google for recipes but most of the “easy” recipes seem to contain millions of different ingredients. Also if anyone has any easy vegan/veggie ideas that would be great as I’m trying to cut down my meat consumption. Thanks!

I have a cheap monthly Richards one and an expensive crockpot one. Cheap one is loads better!

My quick dish is Spahetti Chorizo Crema.
Chop some chorizo and fry in a dry pan with chopped fresh rosemary and some halved cherry tomatoes for a few minutes till chorizo is just crispy. Take off heat.
Cook spaghetti al dente. Add cream, black pepper and grated Parmesan.
If you want you can add some cooked veggies too. (Broccolini, courgettes, petits pois or raw spinach are our faves)
Mix.
Serve in bowls.
Sprinkle chorizo mix over top.

Tuna melts on ciabatta is a quick meal with a salad.

Penne cooked al dente. Season. Add cream, thinly sliced mushrooms and crushed garlic. Stir all together. Mushrooms will cook in heat. Serve.

Those with experience of slow cookers

Chicken - better to go high heat for 2 hours
Or lower heat for longer?

Current favourite is Bubble & Squeak in the Hole. Basically whatever you want (leftovers are good for this), put it all in a big dish and pour on yorkshire pudding batter, put it in the oven.

We've also been making quite a few chickpea curries lately. Chickpeas, a tin of coconut milk, curry spices.

For more vegan options you can replace mince with mung beans. If you are making what used to be a chicken pie or gumbo you can use aubergine instead.
Chop aubergine into cubes. Toss in oil and herbs. Roast the cubes. Then use then in pies and gumbo type meals. It's really good.

Op, look for fish recipes, it is very quick to cook.

Bulk cooking is your friend too. Eg make a big batch of mince, and make a shepherd's pie with some, spag bol with some and chilli with some. Will keep in the fridge for a while.

The Hugh Fearnley-Whittingstall cookbook 'Three Good Things' is brilliant for simple recipes, as is his book 'Veg'.

His parsnip and ginger soup recipe is amazing; I'm not sure I even use all the right ingredients but just bung in what I have to hand and it tastes amazing!

Meanwhile, one of our favourite quick meals/tea is roasted salmon with roasted broccoli. You can dribble any seasoning or sauce over it, but lately DD and I have been using a basic soy sauce/sesame oil mix with chopped garlic and ginger to taste. Can be served with rice, noodles, or sometimes just some crusty bread.

I reckon I could roast most types of fish, and I also now have a rice cooker for fluffy, properly cooked rice in minutes. I was crap at cooking rice on a hob.

This has become a firm favourite in our house now...
Put baby potatoes and some oil in a roasting dish. Roast for 20 mins. Take out to salt and turn spuds. Add smoked bacon lardons. Another 20 mins, turn spuds. Put salmon on top (Lidl do half a side of salmon for about £6) and cook for another 20 mins. Add asparagus and peas for another, final 5 minutes. Ridiculously easy and really delicious.
Thanks to everyone else for sharing their ideas! I find it such a bore thinking of new dinner ideas all the time and have got stuck in a rut.
