do you cook lamb chops with foil over tin or off?

I have them covered over, but wondering should I take the tinfoil off near the end?

No foil at all, they are chips so either grill or fry on a high heat.

If I cook any kind of chop or meat portion in the oven, I cover it for most of the time then leave it open to brown /crisp the skin for the last 20 minutes or so.

I fry them in a griddle pan with salt, garlic and rosemary. Yum!

I'm cooking them from frozen, so that's partly why I covered them as the instructions say 'not suitable to cook from frozen' lol

In my probably not very logical head, I want them to thaw first.

Leave them out for 2 hours to bring to room temperature then put under a roasting hot grill, couple of minutes each side. Best when they are thick and bloody inside yum

From frozen is different. You can't cook meat from frozen and expect it to taste nice

They smell nice. They've been on for an hour with the tinfoil on. I've taken it off. So ten minutes a side with foil off or 20 minutes a side?

Thaw. Heat oil and mint sauce in a frying pan till dead hot, sear for a few seconds each side. Wrap in foil then 10 minutes in the oven.
Pink in the middle. Delicious.
