Healthiest way to avoid cooking?

I really struggle with cooking, I am a vegetarian and am going through a real rough patch health wise so have limited energy and just can't prioritise cooking. I live alone and would like to be able to feed myself simple nourishing things, I'm not entirely devoid of skill, but inspiration and motivation seem to be massively lacking. Does anyone have any tips?
What are the easiest ways people have found to make nutritious meals even when making the bed in the morning is a struggle?

As others have said, cooking a load of stuff with minimal chopping and maximum taste then freezing it for easy microwaving will help.

Roast Mediterranean veg, nice tomato soup, curry etc. Unfortunately, living off processed ready meals, packet soups etc won't do much to boost your health, you need real food, just stuff that isn't a faff.

Some salads are really easy, e.g. mozzarella and sliced beef tomato with a bit of basil and good olive oil.

My fall back meal when I’m too poorly to cook properly is to microwave one of those individual bags of frozen rice (there are flavoured ones too) and a bag of frozen mixed veg, stir together in a bowl with butter, salt and pepper and a beaten egg or two. Nuke again, stirring a couple of times. Eat.
It’s warm, filling, really comforting and has lots of nutrients.

I would buy a stack of Everdine meals in your shoes. Healthy, tasty, quick to heat up.

Scrambled egg on wholemeal toast with a big handful of a salad bag and a drizzle of balsamic vinegar.

Ready made soups are good for warmth- all the supermarkets do them now, and the ones with lentils/pulses will give you protein as well. If you buy par-bake rolls to shove in the oven to go with it, it's a nice easy meal. I actually had boiled eggs and soldiers for supper last night as I was too tired to cook! The protein was filling, so I wasn't hungry later, and I love toast Blush
It would be easy to add salad, fruit etc.
Do you have a microwave?
I have bags of frozen vegetables (broccoli, cauliflower, sprouts, green beans, peas, corn etc) and steam them in the microwave. Very quick to do, not much effort. I use the systema bowl with a lid so no faffing.

I feel like this at times.

I get pre-prepped veg that just goes in the oven/microwave - eg prepped red cabbage, cauliflower cheese, ready to roast Mediterranean vegetables, mashed/roast potato, vegetarian haggis, etc

Plus Linda McCartney/quorn/no bull frozen stuff to throw into the oven.

Then plenty of fresh fruit.

Porridge sachets for breakfast, avocado on toast for lunch etc

It makes me have my 5+ a day when I really can't be bothered

Thank you everyone you've had some really tasty ideas and that's helping me feel like I could manage at least a little better
@bsc I do have a microwave, I think perhaps a slow cooker would also be in order

Check out veggie slow cooker recipes first on internet. All the ones I find that are veggie seem to actually require quite a lot of prep. They’re great for meat, but not so good for veg x
