To think my cheeses lack variety?

I am ordering my cheeseboard, not entertaining over Christmas in particular so will mostly be for me.

I have picked 11 variety but I think I have lots that are similar?
Edam
Manchego
Brie
Gruyere
Stilton
Red leciester
Mature cheddar
Mexicana cheddar
Monterey Jack
Smoked jalapeno & red pepper
Wensleydale.

What would you lose and what would you replace?

We're having a cheese day at my office. I've brought in some Doux de Montagne and Abondance.

Can I mention vintage Gouda? A great cheese, but it has to be vintage, not the regular stuff.

Never had epoisses before, how stinky is it actually?

Epoisses smells quite strongly but the taste is milder than the smell - it’s a kind of creamy, nutty, yeasty almost wine-like flavour. Absolutely beautiful!

Blacksticks blue, epoisses, Boursin, Stilton, morbier, and a good goats cheese are all you need.
I’d skip the cheddar, Edam, Red Leicester and Wensleydale personally.

When you say broe do you mean generic french brie? I love somerset brie- lovely taste

Also bavarian smoked cheese- with the brown rind. You can buy it with ham in too

Camembert (the Tesco Finest one is remarkably good and usually fully ripened)

I'd skip the red leicester and monterey jack and add in taleggio and boursin or sussex marble.

Ok revised list:

Gorgonzola
Stilton

Comte
Cambozoma Brie
Gruyere

Red fox red Leicester
Jarlsburg
Applewood cheddar
Adam
Manchego
Monterey Jack.

The edam and Monterey Jack can be kept in the fridge for sandwiches and what not.

Are the comte brie and Gruyere similar enough that I could loose one?

You have too many.

Much better to have a big piece of 4 or 5 really good ones than little bits of everything.

Too many blue cheeses, not enough fresh ones.

Also, you must have quince paste with the manchego.

I would dump either the Mexicana or jalapeno cheese (very similar). I'd also dump the Monterey Jack since you have chedder and red Leicester. I would fork out for a really good cave aged chedder

Since you don't like goats cheese I would maybe add a Cheshire or Lancashire or Yarg\garlic yarg if you can get it

I serve mine with grapes, figs, chutneys and honey. Eat from mildest to strongest.

My cheese board is
Aged Comte
Cashew blue- Irish blue cheese
A very ripe Brie
A hard goat cheese called Knockdara which is sharp and slightly crumbly
All served with quince paste, crackers, honey and grapes.

I also have mont d’or for baking in the oven at some stage.

I’m mad for cheese, wound rather a giant cheese board than a turkey any day

Should also say Comte and gruyere are really similar so you could loose one of them

You've missed Godminster which is the world's best cheddar. Swap that fur your normal cheddar.

Also a good smoked cheddar (not applewood which is nice but fake!).

And a goat's cheese.

Smoked Applewood
Double Gloucester with Onion and Chive
Clawson Whirl (tesco counter)
Comte
