I have a professional career that I trained very hard for. I've a Bachelor Degree and a Masters.

I've come to hate my career. Really really hate it and it's made me quite unwell mentally and emotionally. I've taken a break to get my head together and explore alternative options.

WIBU to walk away and take a less stressful less responsibility job.
I'm really interested in working in a nursery or creche, but it would be a huge step down for me (I don't mean to be offensive - I mean in terms of pay, benefits etc)

Most definitely, absolutely, without a doubt NOT BU! Your mental health is the most precious thing and no job is worth sacrificing it. Good luck in whatever you decide to do ☺

I was a private nursery worker for over 10 years. It's hard work and stressful. Not the children aspect although being responsible for people's precious babies is demanding. But all the politics, planning, assessments, bad management, bitchy staff, expectation to do things after hours too etc.

It was a much harder job than people ever give it credit for. I'm aware that not all nurseries would be like that. However I have friends that still have the same experiences.
