To ask you about eggs?

Eggs make me queasy. I have real issues with eggs. The look, the smell, the gloopiness Envy(not envy) but I need them to make great cakes for my children. I know I can use egg replacer or flax seeds but they just aren't as good for cakes. The worst bit for me is the brown possibly bloodied bit you get floating near the yolk and the umbilical cord thing which apparently is a protein link. I have to remove them before whisking and usually end up retching. I don't eat the cakes I make as a result of seeing the eggs go in and won't eat homemade cakes in general.

The question is: are there eggs out there that don't have these vile bits??

If the quality of egg would help sway you at all, burford brown eggs are superb. They're not the cheapest but they are very good. Bright orange yolks and super tasty in their basic form, or in baked goods.

I stopped buying Burford browns, they were the worst for brown bits for some reason!
We now have our own chickens so get through a lot of eggs and yes I remove the cord and any brown bits. I'm the only person I know that does this, thought I was weird!

Seems to me you are making a fuss about nothing. You have a sensory issue that's a doddle to fix.

Buy the carton of blended eggs, buy egg replacement or make vegan cakes. There's no reason for being a drama queen, it's very straightforward to avoid eggs if you don't like handling them.

I wouldn’t focus on help with the eggs, but on help with the flood issues.

Powdered wouldn't be as fresh though would they. And anything pre-made in a carton would probably have all those icky bits in and I'd be none the wiser so best to fish them out myself and then I know they haven't got them in. It's grim but I do it for my children. They know I'm icky about eggs so appreciate that I make fresh cakes for them. It's the topic of conversation weeks months ahead of the day as to what kind of cake I'll contour up this time. Shop bought cakes are full of preservatives and don't taste half as good as homemade.
Happy eggs seem better than others but will try others and see if I can find ones better.

If not, are you also freaked out by blood, skin and bones in meat?

That would make more sense to me.

Meat spots are perfectly natural part of an egg, can be a good indicator of freshness

They get formed when a bit of the uterus lining gets incorporated into the egg before the shell forms, or a spot of blood from a burst blood vessel

You don't need to remove the brown spot it's just part of the egg. A fresh egg shouldn't smell.

Yes I'm vegetarian. Even when I wasn't blood and bones freaked me out.

I know they are a natural part of the egg but they are grim.

I was just hoping there were eggs that were less likely to have them.

And no, they don't smell when cracked, it's when they are cooked like boiled or scrambled.

Maybe this is telling you it is time to move a step closer to veganism?

They are loads of lovely recipes around now for Vegan cakes etc.

Cheap crappy eggs are less likely to have them

Also ones closer to use by date as the spot gets absorbed over time

I agree with the pp. There are some amazing vegan cake recipes out there, that are indistinguishable from ones with egg.

Get a good vegan recipe. Job done.

I'd love to find some great vegan cakes but I'm not convinced I can find great vegan alternatives to eggs, butter, soured cream. I have made vegan cakes but they aren't the same.

No way am I buying cheap anything for my cakes so will stick to the fishing out and trying not to look too much. It's an exercise in dissociation Grin

I keep my own chickens, I never see bits like that in the eggs from our girls. Could you buy eggs from a local neighbour? Ours are never more than a couple of days old unlike mass produced eggs which can be weeks old at point of sale.
