My husband has challenged me not to go food shopping for 2 weeks as I go far too often and we're keen to see how long we can survive on whats in the house. However, I'm bored of eating the same meals all the time so am looking for some inspiration and I know how much mumsnet loves meal plans Grin
Please tell me what lovely recipes you'd make with these ingredients! has to feed 2 adults, a 2 year old and a 4 year old. TIA.

JanetLovesJason · 08/11/2018 18:09

Satay squid

SaucyJack · 08/11/2018 18:10

Chickpea and squash oven risotto? Roast both of them in the oven with loads of sage, before adding the rice to the dish with a bit of stock, wine and garlic.

I’d have it with rocket salad and stinky foot cheese grated over the top.

Racecardriver · 08/11/2018 18:12

Green curry:
1 tin coconut milk
1 onion
1 carrot
1/2 broccoli head
1 tomato
4 mushrooms
A few handfuls of spinach

Chop and fry onions
Add other veg chopped up as appropriate a stir fry for a minute.
Add coconut milk and curry paste.
Serve with rice.

That sounds lush, will definitely write that one down. I didn't realise how much stuff we had till i wrote it all down! Doesn't look like that much when it's in the cupboard.

You need to go through it all an identify what will go off first and go from there. I would bake the salmon and serve with veggies and rice. Then you could make a big pot of veggie pasta sauce with tomatoes as a base, add the courgettes, mushrooms and peppers. Use it for one meal and portion up the rest for the freezer.

MessyBun247 · 08/11/2018 18:14

Tuna pasta bake. Lentil chilli. Red lentil soup. Veg enchiladas.

Atalune · 08/11/2018 18:16

Thai curry
Salmon fillets with miso strut fried veg and serve with rice
Mackerel pate on toast
Miso coated tofu store fried with crispy kale and rice
Turkish style eggs with peppers and tomatoes and spinach served with hummus and a quick green salad
Veggie ramen in a Thai style broth with coconut cream

CrispbuttyNo1 · 08/11/2018 18:16

Are you vegetarian? If not then you need some chicken/pork/mince and you’ve probably got enough to last you a month!

halfwitpicker · 08/11/2018 18:18

You're kidding? There's enough grub there for a month!

Mammylamb · 08/11/2018 18:19

If a lot of the veg are fresh, I’d cook up a few meals and then freeze them so that the veg doesn’t go to waste!

NotUmbongoUnchained · 08/11/2018 18:21

Yes sorry i plan to do a load of batch cooking tomorrow. our freezer is practically empty as we dont really buy much frozen stuff so theres plenty of room to fill it up. We only really meat if we really fancy it, but we're happy to be half assed veggies for the next week or two.

Got to be a great minestrone in there.
Use the halloumi as a fajitas filling, with the peppers, guacamole etc.
Tofu, peppers, Chinese leaf, carrots, either stir fried or in a chilli ramen broth with noodles.

Liadan · 08/11/2018 18:25

There's a gorgeous sweet potato and chicken curry on BBC good food. It's simple and easy to whip up a batch so you'd have plenty for the freezer. Also there's a pasta bake with mushroom, ham and peas. Delicious and easy but I don't think it's freezer friendly.

PippilottaLongstocking · 08/11/2018 18:27

Stuffed peppers
Curry
Pasta w/ sauce or pasta bake
So many different soups
Tacos
Quesadillas
Rice w/ veg
I only skimmed through your list but those were what I instantly thought of

Although I would eat soup or pasta for every meal if I could so I’m not the best person to ask if you want variety

PippilottaLongstocking · 08/11/2018 18:28

Also eggs can be prepared in a million different ways

NotUmbongoUnchained · 08/11/2018 18:38

What would you guys do with the trout? I dont even know where its come from!

OP posts:
pickingdaisies · 08/11/2018 18:57

Can you turn the trout into a pate? Or just eat it plain grilled with salad. Tandoori trout?
Batch cook some soffrito and or pasta sauce base and freeze in portions.
Maybe sit down with a recipe book and some paper and pen, write down your favourites that you don't have to think about, find some recipes you like that you have the ingredients for, don't be afraid to adapt, start to plan out meals, recipes, ingredients for a week.

RangeRider · 08/11/2018 18:59

I'd also go with tuna & pasta bake. And, separately, mashed potato with something - or buy mince and make cottage pie.

NotUmbongoUnchained · 08/11/2018 19:56

Thankyou. Ive managed to write down over 20 recipes so should keep us going!

Mammylamb · 08/11/2018 22:16

What about a coconut curry with the trout?

possumgoddess · 08/11/2018 22:27

Definitely French onion soup and cheesy croutons!!!!! All you need is the onions ( a lot of onions), some oil and/or butter to fry them in, beef stock, seasoning, bread and cheese. A splash of wine if you have some and feel like putting it in, and some thyme if you have it and like the taste (I don't) to put in with the onions when you fry them. It's so easy and it looks like you have made a real effort.

Catmum26 · 08/11/2018 22:33

salmon stir fry, halloumi and broccoli curry, some sort of roasted veg tart with the filo and cheese.
