These are the only real times I have free. As an employer, what would you think of getting an email this time? What about at lunch time if I were to write them at night then press send at lunch?

I don't think anyone would notice, or care if they did. They'll pick all applications up during their working hours, so it doesn't matter when they arrive.

I don't see why it would make a difference if you apply at midnight or midday, they will be more interested in the content of your application than the time it was sent.

I applied for a job at 2345, it closed at midnight and I got the job :). I don't think anyone would even notice.

The person who decides who gets the job is usually different from the person that picks up the email. So time most probably won't be noticed.

If they print out cover letters from the email page (which is what we did) the time would be on the email. I never thought about it as I was just the one putting it on the bosses desk. I don’t know what they would have thought.

I would only be cautious about applying in the evening on the day of the deadline. I have seen it furiously argued that even an unstated 5pm deadline applies.
