to ask for your tried and tested gluten free baking recipes?

DD1 is coeliac.

She hates most of the GF bread/treat stuff you can buy so we do a lot of baking.

We have a bread maker and make a lot of rolls/bread/pizza dough, etc and bake a lot of cake stuff.

We thought we’d have a bit of a bake up over the weekend and try some new stuff - she really misses croissants so tried a couple of recipes but they were a complete disaster.

We’ve never really mastered nice baguettes

She loves brownies, but they are my baking nemesis

We’ve got bread/rolls/pizza dough and stuff like chocolate muffins/lemon drizzle cake mastered.

But stuff like brownies, chewy chocolate chip cookies, croissants, chocolate eclairs - we’ve tried what feels like a million recipes over the years but they never come out quite right so wondered if anyone had some foolproof recipes they could share please

Best chocolate cake ever. No flour what so ever.

200g 70% Dark Chocolate
200g Butter
140g Caster Sugar
7 eggs separated.

Melt chocolate and butter together then leave to cool a little.

Whisk yolks and sugar until pale, frothy and double in size (takes about 5 minutes with a mixer)

Whisk whites to soft peaks.

Fold yolk mixture into chocolate and then whites in.

Pour into a greased and lined tin. Bake at 160c for 45 minutes. The cake will rise and crack whilst cooking but sink when cooling.

Serve with lashings of vanilla ice cream and toffee sauce

We made the Nigella GF brownies last night, I actually managed to get them to work and she said they were lush

She’s having a bit of a hard time with it all lately and has been eating things she shouldn’t so she’s very happy to have brownies

Schär make some gluten free croissants that are frozen, you heat them up in the oven for 8-10 minutes. My son who has a wheat allergy eats these and likes them.

Sorry just seen you can't get those in the UK (in Germany). When we were in the UK we used to get these

Bizarrely I haven't seen these in Germany so they must sell different products in different countries but these were very good too.

Our ASDA has started stocking that brand recently, we had some burger buns which she said were quite good. I’ll have to ask when they’ll start stocking the croissants

Also second Felicity Cloakes perfect brownies with GF flour subbed in.
My mum has made me a few decent chocolate cakes by subbing in gf flour to this recipe: allrecipes.co.uk/recipe/22286/cheap-chocolate-cake.aspx (it's divine with regular flour but very good gf, too). By far the best gf chocolate cake I've made has been using the Betty Crocker gf cake mix - but that might be cheating! (Her gf cookie mix isn't worth bothering with IMO.)

I have two friends who need to eat gf. I have had good success with this recipe: www.bbcgoodfood.com/recipes/1223/bestever-brownies I just used a gf flour and added an extra egg. Followed the instruction me exactly and make sure not to overlook. I couldn’t tell the difference between the gf and normal brownies. This recipe can also be made dairy free very easily (have tried that too - also couldn’t tell the difference).

I've never managed to make gluten free bread.

Personally, I find Tesco's own brand bread is fine for toast.
I'm also a fan of DS ciabatta rolls - either cold but definitely even better crisped in the oven. I also tend to live on BeFree pitta bread for sandwiches.
Not found any wraps that aren't leathery.

Sandwich thins are ok too. Guess it's because you toast them.
I noticed that there were some G/F baguettes in Asda yesterday but haven't tried them.

As for baking, I find anything that doesn't require a high gluten content (such as bread) is fine. My DC now prefer g/f cakes to normal ones.

Things to try, make cakes slightly moister than reglar mixes, try beating the eggs and sugar, then add oil instead of marg before folding in the flour.
I made scones using an egg & yogurt instead of milk. The dough is very sticky and isn't rollable but the result tasted like scones.

I've also just discovered psyllium husk. I've only used it a few times but it looks promising. It is quite expensive but you only need a small amount.

Did have coissants once or twice and although the taste was right, the texture really wasn't. Haven't seen them for a few years and there are none in the French supermarkets so I'm guessing no one has really mastered that one yet. I find the sweet brioche rolls almost acceptable as an alternative.

Dr Schar are branded DS here.

Also seen frozen doughnuts in Asda which is something I really miss. However, I'm on a diet and have, so far, resisted the temptation.

If your DD has been diagnosed coeliac but doesn't qualify for it on prescription then I'm guessing you aren't in the uk.

We are in the UK, but our area stopped giving prescriptions for GF products over a year ago

Have you found the free from fairy? She has lots of recipes and her own flour mix. The ones I have tried have been good. She has a Facebook group where you can ask advice and everyone is v helpful. She has a pastry book which might be useful although I haven't tried it myself yet I do plan to soon freefromfairy.com/shop/books

am sure you can make a swiss roll without flour if you sub in cocoa, would that be okay, or does it have secret gluten in it? ...it's not something i have ever checked tbh

I have used the dove farm flour for cakes with no bother at all, just because I saw it on offer one day and wanted to know how different it would be

Mary Berry recipe for no flour swiss roll finally loaded on my laptop, so that would be nice if she likes chocolate.
This is my go to brownie recipe you could easily sub in GF flour.

also, the recipe has gone missing from my computer, but there was one for chickpea brownies, which was drained chick peas, melted chocolate, sugar and eggs and that was a good recipe too. Slightly more cakey than my usual brownie, but good for a change! Have a google there is bound to be another out there.

We often use two thirds GF flour with one third buckwheat, looks more wholemeal but adds a flexibility to the final product. Blinis are the ultimate buckwheat product www.bbc.com/food/recipes/cheesesoufflebuckwhe_93524

Pea flour works well for thickening sauces hodmedods.co.uk/collections/flours these are expensive but do improve standard GF flour. Their quinoa flakes are also a good oat substitute.

Chickpea flour is dead cheap and good in savoury stuff. Cassava flour is an acquired taste but good 50?50 in cheese scones.

We also use millet, roasted buckwheat or quinoa in place of couscous.

We’ve tried so many that have been a total disaster, it’s good to get recommendations

Adding cant ham gum to baking makes a massive difference too

Will have to have a good hunt around Asda too - we’re both bored of making/eating the same stuff

I’ve had responsable success adapting a Yorkshire puddings recipe to make it GF but I’d have to look for it as Incantbquite remember the details of the recipe. I Know this has been mainly about sweet things but just thought I’d mention it.

We make Yorkshire puddings and they’re passable. I just sub flour for GF flour and add some xantham gum. DD says they taste right, but the texture isn’t quite right - nearly but not quite
