AIBU to ask what vegans actually eat?!

A few of my friends have become vegan and keep evangelising to me about the health benefits. And I believe them. But whenever I ask what they actually eat for meals they get very defensive and won’t actually answer me. One of them answered with stir fry as an example and when I asked what protein they have in it, she told me ‘protein is a myth!’

I’m genuinely not trying to attack vegans, i’m interested and want to figure out what I could eat if I were to adopt it. I’m a bit of a foodie so I want exciting tasty food and it is just such a departure from how I eat now, I need some examples so I can work out if it’s feasible

We have baked versions of onion rings, so I'd have to make sure they were baked not fried, I guess, since I don't want hydrog fat, and other veg fats aren't suitable for deep frying. Some types of bread or buns aren't vegan, either.

Alittleaubergine I usually eat houmous for a sandwich. And don't forget bread is a good source of protein (yes even shitty white bread, for those people who are breadaphobic). I'm not vegan myself so I don't check to see which bread is vegan.

@ALittleAubergine tofu and seitan are two of the highest protein things in a vegan diet.

Peanuts legumes nuts seeds and grains can all have good amounts too.

I'll never be officially vegan, as I have rescued chickens and they honestly don't care about their eggs - if they did I'd be a little bit more worried about it. Vegan cheese is becoming better, I recently had a pizza at Pizza Express with vegan cheese and it was nicer than dairy. Seitan is very meaty if you want a substitute and it's high in protein, I need to get that nailed - i don't think what I've made so far is good enough.

As for what vegans can eat, they eat vegan versions of everything you'll eat. If you're a meat and veg person you've got meat substitutes to do that. If you eat lasagne that's easy to adapt. Curry lends itself to being vegan very easily, as does Chinese, Mexican - everything really.

Last time I went into Tesco there were at least two or three vegan cookbooks in the book section, as well as several magazines available in all news sellers. Easy enough to flip through those.
