AIBU to ask for your easy sweet chicken curry recipes!

We love a good chicken curry once a week in our house but kids have been complaining lately that they are not sweet enough! I'm interested to hear all of your fairly easy to rustle up curry recipes especially if they include natural sweeteners like mango and coconut milk and anything new that I haven't thought of.... also interested in lamb or beef options too!

I do a really basic easy curry by roasting one of those packs of butternut squash and sweet potato with a bit of oil. When soft mash it up a bit to taste. Add big dollop of pataks, fry for a bit. Chuck in can of coconut milk and some passata and chicken leftovers. Simmer for a bit.

Dd2 adores it. I don't eat it as meat free but am reliably informed is sweet and yummy. Freezes like a dream too.

Are curries supposed to be sweet? I would just make a normal curry and add a spoonful of mango chutney to their portions.

Add a tin of pineapple in juice. Sort of combining Chinese sweet and sour and Indian curry.

The curry was delicious 😋 I did Gahwhatevers recipe but with chicken and substituted the apple for a very ripe peach which worked really well, I got no complaints about it not being sweet enough anyway! So after all that effort I forgot to take a snap of it so you'll have to wait til our next curry sometime next week now!

I sometimes grate ginger but normally use a cube of frozen garlic and ginger which is an awesome time saver if you use those ingredients a lot which I do. They come in big bags in the world food frozen isle or I get mine from Tesco online. They stop me throwing away random bits of half used ginger all the time!

StephenStrange I like the sound of those frozen garlic and ginger cubes, I'd say a great time saver and less waste too! So a wander down the world food isle next shopping day will be on the agenda! Thanks Smile
