Pasta Alfredo.

Chicken risotto.

A quick lunch using leftover chicken is chicken noodle soup. Heat up chicken or vegetable stock, add diced chicken, noodles instant ones are fine, any chopped vegetables such as broccoli, green beans, or leafy vegetables like spinach, even mixed salad leaves. Bubble well till heated through. Garlic, ginger, a splash of soy sauce can also be used.

I did a lovely recipe this week dead simple sliced potatoes, oil and salt, chicken thigh on top with a slice of lemon, rosemary and salt and pepper all wrapped up in foil. Bung in then oven for half an hour. The potatoes took in the juices from the chicken and It was so yummy and simple! Definitely be doing that again

Mix together a generous tablespoon each of Dijon mustard, olive oil and red wine vinegar. Put a flattened out chicken breast in an ovenproof dish, spread over the mixture (doesn’t matter if it’s a bit liquidy as long as the breast is evenly covered) and put under a preheated medium grill ensuring the meat is 6 or 7 inches away from the heat. Cook until done and tender, turning and basting half way through. Serve with a hearty salad and crusty bread, or new potatoes and green beans.

Roast a chicken breast in the oven with cherry tomatoes. Remove chicken when cooked. Add a couple of spoonfuls of creme fraiche to the Tomatoes, crush them in and mix to make a sauce.pour onto chicken.

Read it on here once. It is delicious and v easy.

I buy a nice little free range chicken from the market and joint it myself. I freeze and use in various ways but the easiest and quickest is a leg joint (drumstick and thigh) rubbed with olive oil, salt and pepper and roasted for 30 min with a couple of baby potatoes also rubbed in oil. For veg I cut a carrot into thin batons and steam with broccoli, 10 min max, serve all with meat juices poured over.

@ClandestineAdulation can I have your recipe for chicken satay please? I've never made it before but could easily scoff the whole portion we order from our Chinese takeaway. It's to die for
