To ask what to do with lentils?

Dr has told me I should try to eat more lentils for one of my deficiencies... but what do you do with them?

Ive only ever had them in soup/stew but I dont tend to eat much of those.

Is there anything else i can do with them? Ive had a quick google but always prefer tried and tested recipes

Garlic Mushrooms with Lentil.

Slice the Mushrooms, fry with masses of Garlic & a diced shallot if liked.

Steam some chopped veg e.g Asparagus, Baby Corn & Broccoli.

Mix the Mushrooms & Veg and stirin a sachet of pre cooked Puy Lentils.

Enjoy !! This is one of my favourite speedy Suppers. Will easily feed 2 and is yummy cold as well

Cook green lentils and add them to anything or use them as a meat substitute where you would use beef mince (or eat them on their own because they are DELICIOUS)

Use split red lentils to make a thick stew (200g + litre of stock)

Use a mixture of different lentils to make a dhansak (look up a good recipe)

prepare for many farts

I always use dried lentils because I find tinned ones awful but a lot of people like them.

boil red lentils till soft with some curry powder/paste

drain well.

let cool a little (spread on a plate/tray) and chop some spring onions/red peppers

beat 3 eggs and add to the rest of ingredients and then bake off for around 30 mins till set - it's a kind of quiche without a crust that tastes like dahl :)

Oooh these ideas are fab!

The people who have mentioned salads.. i work half the week in the office (can make anything and microwave) and half the week on site so have to have ready to eat food.. which lentils work best cold in salads?

I hide them in anything I cook minced meat in - it bulks it up and adds fibre. (And cuts the cost of the meal exponentially). Spaghetti Bolognese, Lasagna, Curry, Mexican - you name it!

Yes, Puy lentils in salad are delicious. I usually add mint and feta. Look for generic lentilles vertes in supermarkets, they're much cheaper than actual Puy ones.

I found a red lentil lasagne on here once but I can't find it with advanced search now. It was made with tinned tomatoes, grated carrot and loads of parsley and was so delicious and fresh-tasting.

This lentil dahl is lovely, and quick. I add some grated carrot and celery and loads of fresh coriander to up the veg content. We usually have it with a garlicky flatbread or naan for dipping and scooping.
