AIBU to ask for help with cake??

I am going to a wedding tomorrow and there is a bake off inspired challenge as part of the reception (garden party)

I have to bake a cake this afternoon and had it all planned but just realised its a 2 hour drive and don't think the cake I was going to make will survive the journey in this weather.

So help! Need an easy cake idea from a trusted recipe that does not need refrigerating but still looks a bit more impressive than a victoria sponge.

And fairly easy as I am no Mary Berry!

Do you have a cool box?
Put cake in there on top of ice packs, it should be fine.

failing that - a good lemon drizzle will win on taste

Lots of thinner layers makes a simple cake look good. 4 or 5 works best. Take some fresh fruit and pile it on top to decorate when you get there. If you use a piping bag to pipe the edges of the filling then it will still look good naked and buttercream will be fine unrefridgerated for a few hours.

Nigella rose, pear and pistachio cake is stunning. Five minutes in the food processor and an hour in the oven. If you can get hold of edible rose petals then this one is a winner every time.

Would travel very easily in a box.

Thanks everyone! Will have a look through all your ideas. Especially like the ones where I just dump fruit on top as am rubbish at icing!

I was wanting to go for a more traditional round cake you can slice as opposed to traybakes/small cakes etc but may just have to make some brownies for myself now Grin

The cake I was going to make was Mary Berry's Maple Syrup Cake and the filling and topping is made of cream and maple syrup. Guess thats why is says to keep chilled in the fridge?? I did consider a cool bag and ice packs thanks but just worried that 2 hours in the car and then a few hours out at the wedding will be too long for it and I might end up with runny cream or it going off.

Can I hijack and ask for some advice? Made a load of banana bread today and have zero idea how to store it. It's cooling at the moment but what do I do after? Tin? Foil? Fridge? Cupboard?

I'd guess a cake tin and wrap the end in tin foil once you've cut it, but as this thread shows I am not an accomplished baker so may be best to wait for someone more knowledgeable to come along!

This thread has made me hungry now! Off to the shops soon to see what is available and will make my decision from there. Need to check the sizes of my cake tins too....
