I'm not a fantastic baker but want to make something yummy this afternoon- not cake!

The best thing I made lately is Hestons lemon tart. I think it's on the Waitrose website. Honestly AMAZING.

Or Lorraine Pascals creme fraiche quiche. Delicious.

We've just put a baked cheesecake in the oven - this one from Nigella. I've done it before and it's been fabulous, but I have a newish, much hotter oven so am nervously making adjustments.

Butter tarts! I discovered these on a trip to Canada and everyone I've made them for loves them! Easy to make if you buy ready-made pastry from the supermarket instead of making your own.

SoupDragon's flapjacks (famous MN recipe) - we had another batch last night as DD has a bake sale in school today (her class are "running to Africa" (a version of a daily mile by the whole class around the pitch) and doing other fundraising stuff for a school in Africa this year).

I've tended, even though SD has ideas to freeze the other half of the can of condensed milk required, to just do a double batch and keep some aside for later consumption as they will last, if kept sealed, for at least 2-3 weeks.

That way, I get away with a tray of plain ones, and a tray of ones with seeds and dried fruit (latter more for me).

Cheese and onion rolls...

15g butter
1tbsp olive oil (I used rapeseed oil)
1 onion, finely chopped.

Melt the butter and oil, cook the onion for about 10 minutes over a low heat until translucent. Drain on kitchen roll and set aside.

2 tsp yeast
360ml warm water (about 1/3 boiling and 2/3 cold)
450g strong bread flour
1 tsp sugar
1 tsp salt
1 egg, beaten
30g melted butter
115g grated cheese

1 beaten egg and 3 tbsp milk to glaze.

To make the bread, put the flour, sugar, salt, yeast, beaten egg, melted butter and warm water into a bowl and mix until you have a smooth dough.
(I used my kitchen aid to do this)

Turn the dough out onto a floured surface and knead for 10 minutes.
(Again, my kitchen aid did this!)

Put the dough into a bowl, cover and leave for an hour to double in size.

Knock back the dough, spread out into a flat circle and add the grated cheese. Fold the dough over the top and knead for a few minutes to incorporate the cheese into the dough.

Divide into 12 equal pieces, roll into rounds and place on a greased baking tray (I needed 2 trays) about 5cm apart.

Cover and leave for 30 minutes to rise.

Preheat oven to 200 degrees C.

Brush the rolls with the egg and milk and sprinkle on the fried onions.

Bake for 15-20 minutes until golden brown. (As I used 2 trays I swopped then over in the oven halfway through baking so they both had time on the top shelf).

They are so delicious! We've eaten 2 each already and the rest have gone into the freezer for when I'm back at school and am too tired to cook!
