How long to cook a beef stew start to finish?

From pre-browning the beef, how long in the oven to get really tender melty meat and at what temp? And if I want carrots in it, should I only put them in for the last hour or so as I don't want them turning to mush?

I don't have a slow cooker before anyone suggests it!

I always use shin of beef and always cook in the oven for a minimum of three hours. As another PP has said, it's even better if reheated the next day. I hate food cooked in a slow cooker, both the texture and taste but intrigued by the Instant Pot electric programmable pressure cooker mentioned by Queen and will be having a google later.

Crikey most people say three hours.

I did a beef stew yesterday for about 4 hours to be eaten today, we'll see how it turns out.

Three hours, acceptable but longer is better imo.

I always start on the hob and then go to the oven, hob only takes longer.

I think the gentle, all-round heat from the oven gets a better result than the underneath heat from the hob.
