Ask you to help me eat vegetables? Fussy eater

I’m a terrible eater ... my favourite meal would be chicken nuggets and chips.

I don’t know if it’s anxiety but my throat seems to close up at the thought of eating vegetables ... I can’t undetstsbd how people find them tasty.

I’d love to be able to eat a salad

I love veg but I have to make it interesting - either stir fry or roast it. By itself it is pretty dull to me!

Quick and easy - mushrooms, onions, courgettes, peppers, asparagus or whatever you like, stir fry, chuck in pesto or chopped tomatoes and a few chillis, top with melty cheese - there's your 5 a day and then some, which can be heated up and served again tomorrow (or mashed into a soup for a change).

Courgettes freeze if you grate them,squeeze excess water from them and then make into fritters,yum.

I am fussy too and have got more into veg in adulthood. Here are a few ways I have surprised myself by enjoying various veg a lot more..

Thai style deep fried in crispy batter with sweet chilli sauce - I can eat broccoli and cauliflower this way!

Honey glazed carrots/parsnips

Raw cauliflower crumbled into salad

Peas stirred into rice as a side dish

Pak Choi or salad with satay chicken

You don’t have to like all veg anyway!

Decide which veg you want to eat, try a tiny amount, then when you feel that you can eat that size piece without problems double it, then repeat in about s month you should be able to eat one veg, then try similar and repeat again,after a few months veg should be back on the menu

Onions are used in tons of meals because they add a good flavour. What is it about them you don't like, and how did you eat them, cooked or raw?
My eldest never liked onions. For him, it was the texture of cooked onions he didn't like, so I always blitzed them to a purée in a small food chopper, to add them to curries, chilli and bolognese, and in stews, I used whole shallots, so they flavoured the stew, but he could leave them out of his serving.

I'm surprised you like green beans, a lot of people don't like their squeaky texture on the teeth. I'm glad to see that you do like some veg though, as it will make trying other veg easier.
When we do a roast, we do a mix of sweet potato and parsnip, chopped into similar sized chinks, drizzled with olive oil (and sometimes honey too), and some grated nutmeg over it, then roasted. At Xmas, we also add butternut squash too, as that's sweet like sweet potato. If you look in the prepared vegetable section at the supermarket, they often do a sweet potato and butternut squash mix for roasting or making into soup.
Also, try carrot and swede mash. You can buy it ready made, or get the ready chopped veg. Serve it with a knob of butter and a good grinding of black pepper (nutmeg also goes well with it).

I love all veg except broccoli. It's not the taste it's the texture in my mouth. I can and do happily eat sweet stem broccoli. I would love to be able to get past the actual putting broccoli into my mouth. I eat lots of veg everyday. I'll have a home made wrap at lunchtime full of salad, onions, peppers etc and then steamed veg with dinner. I would love to be able to add broccoli to my diet.

I know you CAN freeze courgette and aubergine I just don't like the taste after they've been frozen.

The one veg I don't like is sprouts - no matter how they're cooked.
