to ask do people not make milk puddings anymore?

I found a recipe I wanted to make Mincemeat and Shortbread squares. One of the ingredients is ground rice. Fine, but I knew I didn't have any so I added it to the shopping list.

DH did the shopping and came back saying he couldn't find it anywhere. Hmm. I went to look for myself. Admittedly it is not something I can remember having bought myself but I know it was a staple my mum always had in the cupboard for baking and making puddings with.

It will be where they keep the semolina I thought. I remembered all those weekday milk puddings my mum made - rice, ground rice, semolina, tapioca, sago. Find the ingredients for those and that is where the ground rice will be I thought.

Except they don't seem to exist anymore. I checked all the supermarkets in town and the wholefood store. No luck. Is this a whole species of pudding people just don't do anymore? Anyone know where I could get ground rice?

If you are still there and are at all interested I substituted ground almonds on the basis that:
a. It has "ground" in the name
b. I think my mum used ground rice sometimes as an economical substitute for ground almonds in recipes like maids of honour so maybe it will work out ok in reverse.

what about flaked rice?
that's what my grandad always used for rice pudding

I think it’s time for a semolina revolution. We have it fairly regularly and I’m always surprised at how many people done know it or think it’s disgusting from memories of having it at school. We have it for breakfast, IMO it’s way tastier than porridge.

I want semolina with a blob of jam for pudding now. I don't have any. Sad I'll add it to my list for tomorrow.

Waitrose sell semolina although I've never had it in my life.

I love all sorts of milk puddings! But rarely make anything apart from rice pudding with pudding rice (or arborio if I can't find pudding rice).

How do you all make your semolina pudding??

I melt butter in a pan, add sugar let it mix well and then add water. Then add the semolina.
Lovely stuff. Was wondering what other ways there are to make semolina.

Ps when you're in manchester 'Manchester Cash and Carry' (cheetham hill road) is huge and will have it in

I love home made rice pudding and still use my granny’s recipe: rice, whole milk, sugar and a dod of butter to make a skin. I sometimes put sultanas in too. Lush! I ate loads of it last month when I had an infected wisdom tooth and couldn’t eat anything too solid. My granny used to make milk jelly too. Especially lovely with evaporated milk (which we used to call “vappy”).

We had ground rice pudding and cornflour pudding. Never rice pudding as mum had it at boarding school.

I definitely used to make ground rice pudding when the kids were smaller, (with tinned fruit) I think from Booths.

I have ground rice, ground almonds, pudding rice and semolina in the cupboard. Ground rice is used least but is used. I make a lot of semolina because we all like it, and rice pudding because DD and DH like it.

With milk and cream and vanilla and raisins soaked in rum.

Ours love rice pudding but only home made. It's very cheap except the oven needs to be on for ages so fine if you're doing a roast or stew anyway.

My granny used to make milk jelly too Haven't heard the words "milk jelly" for years! How is it made? Is it just jelly made with milk not water?

Does anyone remember junket? There's something lovely about spooning a big lump into your mouth then using your tongue to squoosh it through your teeth.

Ooh this is making me nostalgic- my mum used to do slow Aga cooked rice pudding made with full cream raw Jersey milk straight from the farm. Fuck, it was heavenly

I've previously searched myself to death for sago in the supermarkets (and tried one or two of my regular world food shops without luck), but now that the OP has found her ground rice does anyone know if any of the supermarkets sell sago? If you've seen it, please please please tell me where!?

Yes milk jelly is made almost the same as normal jelly, but I don’t use as much boiling water to dissolve the jelly cubes so that I can add lots of milk. I don’t think I have made it since 1990’s. I will have to pass it on to my grandchildren.
When I was regularly making rice pudding, I was always amazed at how much milk was absorbed. As I didn’t have weighing scales I just used to guess the amount of rice and start by adding a pint of milk. Seemed to add loads more during the cooking process. My dad used to love it with a great dollop of jam. I hate milk puddings!

This may blow your minds but a traditional (European) Jewish dessert, lokshen kugel, is basically a pudding made with the sorts of egg noodles Jewish people usually put in their chicken soup. It’s truly odd but weirdly delicious.

Nigella has a recipe for the Lokshen Kugel which she also says is nice and an unexpected hit with most people she served it to.

There is also a Middle Eastern one called Mahlabi or variations thereoff and it’s milk thickened with starch and served cold with a scented syrup on top.
