How to prevent my wellingtons soggy bottom

Hi,

Does anyone know how to stop my wellingtons base from being soggy?

I've got a lovely recipe and it tastes delicious but it's not perfect....

If you've pancaked the beef- and it's still soggy turn to your tray. I always pre heat the tray- and if I can I use a pizza type tray with holes to ensure more even heat distribution to the pastry below.

No pancake/omelette to late for that now.

Was using just a normal thin baking tray. Although I have Pyrex and also round pizza pans. Could baking paper on top of the pizza tray possibly work then?
