to want rid of all this leftover cheese...?

I have SO MUCH leftover cheese. And all little weird bits, like Stilton with apricots, and Gloucester with onions and chives, and buckets of Camembert, and Stilton...

What do I do with it??!!!!? Does anyone have any good recipe ideas to use up weird odds and ends of cheese?!

Not really an AIBU, but posting here for the sake of traffic...

Failing that broccoli and stilton soup, some macaroni cheese, cauliflower cheese and just eating blocks of cheese will do

Cheese and potato pie, cheesy potato and onion bake, cheesy pasta, naff but bloody delicious cheese and pineapple hedgehog, fondue, souffle, coddled eggs and Cheese, cheese omelettes, roasted cheesy onions.....

There can never be too much cheese. Ever.

I thought I agreeed with you. When all my guests showed up with cheese I thought “amazing! I’ll be eating blocks of cheese until February!”

But I was wrong. You can have too much. THERE IS SO MUCH. Both veg drawers in my fridge are full of the stuff, and there is also another half a shelf at least.

We have a lot as well. Just had cheese on toast. If a reasonable size block freeze it.

All the weird ones makes a lovely quiche or Mac and cheese in this house. The quiche with ham and all the random cheese is my Christmas favourite.

We have everything left except the Brie but have no concerns over the rest not getting eaten - in fact I will be having cheese and biscuits after our curry tonight purely to help reduce wastage Grin

Hard cheese can be frozen. What about grating some before freezing? I've done this and it's very useful to pull grated cheese out the freezer for cooking.

Freeze back all but the stuff with herbs and fruit in it. Even the soft cheese, as you won't be eating it with biscuits but putting it in sauces.

In February some time, if you are like me, you will look at all the little bits and pieces and you will make a lovely lasagne.

Anything that needs a cheese sauce will thank you for a real one.. in a month or so Smile

Freeze it.

I buy fucktons of the reduced Stilton wheels in Sainsbury's to freeze. Lasts months and saves a fortune.

I have to admit I took all the left over Christmas cheese and made the cheesiest of cheesy bechamels in October... it was lovely.

But then I also save the heels of parmesan to make a light cheesy sauce too.

I hope I remembered to say I really enjoy cooking and try to reduce food waste to the barest minimum, for fun! Otherwise I'd just sound odd... OK, it is odd, but it can make for some great meals Smile

I’m gonna use it all up in cooking. Just made pasta with manchego. Have a massive Stilton so buying broccoli to make a huge vat of soup I can then freeze.
Cheese is great as an alternative to meat too. You can bake feta for example!

Also rosemary or garlic crackers, pickles or chutney will speed consumption.
Toasties and Cauli cheese with gammon.

Watch out for the cheese poo. Tesco juicy bits fresh orange is like napalm through cheese.

We even freeze feta and halloumi... both get used in Mediterranean veg dishes.
