To ask advice on easy Xmas menu plan including 2 vegetarians

I have searched online but am struggling. I want a vegetarian starter suitable for all, an easyish add on for the main (all veg and potatoes will be easily vegetarian and veg/onion gravy) and will ensure a vegetarian friendly dessert. Any ideas so that I am not hugely going out of my way to make the main appetising.

We always have the Cheddar and Vegetable Roast from the Food Aid Cook bookat Christmas. It tastes like a much nicer stuffing and goes really well with roast potatoes, brussell sprouts, etc

I'm veggie and am doing cauliflower cheese (topped with breadcrumbs/cheese and browned in the oven) as one of the main side dishes and will just have plenty of that - all stuffing, roast potatoes, gravy etc will be veggie. I'm not doing a starter as such - just hummus, dips, crisps, crudites etc. but I think that the mozzarella, tomatoes and basil idea is a lovely one :)

A brilliant veggie main that goes with all the trimmings is sliced cheese ie. mozzarella/cheddar in breadcrumbs, deep fried and served with a creamy onion sauce- goes beautifully with all the veg etc and is nice and hearty for veggies. Also you can pre-crumb the cheese & have in fridge and just take out to dry shortly before serving.

Thank you all for posting. I think I might go with the mozzarella salad to start so that everyone is still hungry for the main. I am going to 'road-test' a couple of suggestions for the main this week and get a quorn roast in just in case I can't find a winner!
(The camembert will be my 'just before bed' treat).

Artisan Grains country nut roast is delicious. Every meat eater I've served it to has loved it. It works as either a veg main or stuffing for meat eaters.

For my vegetarian friend I normally make grilled haloumi and cauliflower or nut burgers (Aldi), sometimes chickpea burgers (homemade). She also eats fish so salmon too.

Not a vegetarian then 🙄
