Just discovered sauerkraut-yum! What else should I know about?

Sorry not really an AIBU...

But tried this and it was soooo tasty! Would love any other ideas you have, especially if it's healthy-ish! It would be U of me not to try all these things ;)
I love discovering new foods and there's a new Polish shop here and another one which describes itself as "Euro, Asian, African and Caribbean" so any tips for yummy recipes much appreciated! :)

Kimchi. Korean staple that's basically spicy sauerkraut.

My husband makes some excellent recipes from sauerkraut. A white wine sk quiche and this amazing tangy sk thing with tofu and creme fraiche in a pan. He can persuade me of anything just with these 2 dishes.

Things I avoided for years but now love more than I should

Gyros (especially pork with chips inside)
Potato’s Provencial (with a dollop of garlic mushrooms)
Paella (chorizo variety)

You can use the same technique used to make sauerkraut with loads of different vegetables, grated or just chopped into sticks.

Carrots and courgettes both work well.

Basically, put in a glass jar with enough water to cover and a heaped tablespoon of salt per litre of water, and leave for two weeks or so outside the fridge. Taste regularly to decide when it's 'done' enough for you and then put in the fridge, where it will last a good long time.

My DH loves sauerkraut and says it's very good for you. I can't bear the stuff.

Wow, neo can you share recipes? I absolutely love sauerkraut. Lidl sometimes do a sauerkraut and sausage stew which stinks but is delicious (one of the few things I miss from before I was veggie).

Another vote for kimchi. Indian aubergine chutney is a favourite of mine.

Red cabbage. Amazing stuff.

If Polish shop sells beer mustard or sweet mustard then get it bulk (and send me some!).

Rye bread (or sour dough) lasts forever.

Best meal ever is roast chicken or pork bellies with red cabbage, sauerkraut, German dumplings and gravy

Stay away from Kimchi it's the food of the devil!
But try raclette cheese melted over potatoes with cold meats and pickles!

Lovely Dutch home cooking dish called stompot - mashed potatoes mixed either with kale or sauerkraut, with chopped smoked sausage. Yum!

Not healthy but Brunost/Gjetost from Norway. It's described as a cheese but isn't. It's boiled up whey (so a by-product of cheese almost) and is rich caramel colour and tastes like a savoury caramac or dulce le leche. Works well in apple pie but also used in savoury dishes like stews for richness. Our local deli sells it.

Sauerkraut lovers...try making a toasted reuben sandwich. It's salt beef, thousand island dressing, sauerkraut and swiss cheese. We use pastrami instead of salt beef. Lush.

Oooh, tika I haven’t ever thought of that! No idea why not. I really like quorn frankfurters (guilty school dinner pleasure if I haven’t been bothered to make lunch!
