If it's so easy to cater for vegetarians what are some great dinner party level dishes?

I have one - a pumpkin Gorgonzola pie. Back ups are risotto which is slow and needs attention before serving so not perfect. I love veggies (unless I'm in first trimester like now when it makes me ill to think about them) but none of my other veggie meals are what I would call dinner party standard.

Im not a vegetarian but tbh I would rather have vegetarian food when I'm out and about. It is more than possible to cook for vegetarians to dinnner party standards and even fine dining! YANBU OP!

I have an ancient Carluccio recipe book that has a beautiful open ravioli with porcini recipe, if you google open ravioli with porcini and squash you can see a similiar picture. One advantage is that it looks so beautiful and sophisticated,

Individual spinach or watercress hot soufflés.

Individual suet (vegan suet is v good) puddings, filled with chestnuts, mushrooms, red wine sauce. Lots of herbs and seasoning, including herbs in the suet crust.

Vegetable Tarte Tatin

There’s a fabulous middle eastern thing: an upright pie if filo pastry stuffed with layers of beautiful veg and fragrant spicy rice.

Veg Tagine with ‘jewelled ‘ cous cous. You can present these things beautifully, using a mould to turn out the cous cous etc.

I think some hearty veg dishes can look a bit hippy wholefood in presentation, so I always try to find something elegant

I am a true and utter carnivore

  • last nights supper was a LUMP of Aberdeen Angus rump steak from my butcher "cooked" blue and it was wonderful

today was a BLT for breakfast and then roast chicken for supper

BUT
I love good food.
And some of the very best recipes happen to be vegetarian / vegan
so I love them

many moons ago at festivals was a chap called Leon who did the best veggie hot salad meals going
at camp Bestival, the tofu pad thai was the best
in covent garden the falafel wraps are my fave

its about the flavours and textures
once you focus on that, most recipes are fun

my classic was always at beery parties in my 20's making a pile of pizzas
(from scratch, processed bases and delivery did not exist then)
and the vegan ones were always eaten before the vegans dragged themselves out of the pub Grin
