To feed the family beef mince that is one day past it's use by??

Use by was yesterday and I forgot to put it in the freezer last night. Still looks ok, not smelt it yet. I was planning chilli tonight.
Would you serve it to dh and the dcs?

I wouldn't feed it to an elderly relative or very young toddler but otherwise, I think it will be fine. Make sure it gets really hot and cook for a good long time. I wouldn't take the same risk with chicken though.

Obviously not, but you can smell the products of decomposition. If meat is off it will discolour and smell rotten.

If it looks normal and smells normal, then its fine. There will certainly be bacteria reproducing in it, that's why you cook it thoroughly.

Spring. I once made a veggie lasagne, caught the cat licking the cheese topping. Scraped it off and redid it. Never told anyone, was fine!

You'd better hope the mince supplier wasn't one of those who fiddled the dates, because they gamble on the safety margin too

They've changed it now to have use by dates on, but when I first moved to Canada (2005) the supermarket sold their meat with only a "packaged on" date, and you had to decide how much leeway you felt like giving it before it was "too old". I thought that was bizarre...but we survived!

You can smell spoilage bacteria, but not pathogens, which are the ones you should worry about. Obviously raw meat has bacteria, bacteria will be killed by cooking, but some pathogens are toxin forming e.g. E Coli 0157, Staph. Aureus, and the toxins are heat stable so you can still be made ill after cooking thoroughly. Extremely ill in some cases.
In this example the OP should be fine cooking one day after, but sniffing food isn't a reliable way of identifying if food is safe to eat.

Gave it a sniff and it seemed fine. Cooked it really well on a high heat.

Yes I'd never even question it with Chicken. That would have gone straight in the bin.

Food doesn't go off at the stroke of midnight.

Generally if it looks, smells and has the texture you'd expect and has been kept right eg in the fridge then it's OK.

When food goes off before the use by date, people generally know.

Besides, if a shop thinks it will go off in a weeks time then they won't put a 7 day use by date on there. They'd maybe put 4 days to allow them a margin of error.

Meh. Can't get worked up about it.
A platinum blonde relative of mine is a medical consultant. I'm sure many people think being "blonde" is a bit dumb. But hey, I'm sure they wouldn't mind if they needed a blonde dr, consultant, nurse, fire fighter etc. so really it's only a reflection on the person saying it. Smile

It'll be fine. Cook it thoroughly at a high heat. When use by dates are made they'll often chop a day or two off just to be on the safe side, if it smells fine, looks fine (you'd know if it didn't) just cook it thoroughly and all will be well.
Otherwise people would be dropping like flies

My Mum does this all the time, somehow she's never given everyone food poisoning.

I fail to see how food is magically unsafe to eat after midnight on the expiry date.

Absolutely fine. Would probably use up to 3 days after sell by date. Been cooking for over 30 years and have yet to poison anybody.

I've even used chicken a day or two out of date and it's done no harm.

Just cook the mince thoroughly and it'll be fine. Enjoy your chilli OP.

You can't smell everything that could make you ill. Obviously you can smell of meat is rotten or milk is sour. I wouldn't risk it. I really wouldn't.
Saying "I've done it and I'm not dead yet" is dangerous and irresponsible n
