Had a home made biscuit from a craft fair this weekend - the sort where they are listed in front of the cake stand, you choose and take away; so I have no idea what it was called.

It was a ginger biscuit. The texture reminded me of a brandy snap, but it was definitely more of a biscuit and not a ginger snap either.

Any ideas? We loved them and want to make more!

I remember making ginger snaps a long time ago, it might have been them?

I don't think so - I've made snaps before, but these were definitely not as crumb-y when bitten IYSWIM? Smoother like a brandy biscuit

Cornish Fairing. I make them frequently.
