To think that cafe quality chocolate muffins just can't be replicated?

ALL of my chocolate muffins are shite!

I'm a fairly decent baker....I can make beautiful bread (by hand) and a nice pizza dough...my Victoria sponges are lovely.

So why are all my chocolate muffins shit? They rise...a bit...but they invariably taste meh...and often stick to their cases.

Why aren't they massively tall and tasty?

I use an easy recipe which i think works well

150ml oil
150ml milk
2 large eggs
200g caster sugar
300g s r flour

Mix by hand. Add extras like choc chips. Put in 12 muffin cases.

Put in oven 200 degrees for approx 15 mins. For fan ovens switch on as you put in so the outside doesnt overcook.

The top will be crispy when you first take out but will soften overnight.

Quality of ingredients is important. Belgian choc chips better than standard for example.

For proper moist dense chocolate cakes you need buttermilk. The Cake Angels gluten free chocolate gateau recipe is a faff but gives amazing dense results.
