What to cook for gluten free vegetarian

I've got 3 people coming for tea tomorrow. One is a gluten free vegetarian, one is a vegetarian and the last will eat anything. What on earth can I cook?

Curry is pretty good for gluten free veggies. Something with beans could also work, like a Moroccan bean stew for example.

Nigellas roasted cauliflower and chickpeas is lovely, but increase the seasoning as it is bland on hers. Serve with something green .

Paneer and mushroom curry always goes down well in our house. I use a pataks spice mix.

I was a dairy egg wheat pulse soya free vegetarian whilst breast feeding my youngest for 4 years. Honestly isn't hard Dont be daunted

What would you normally cook? Is it friends round for giggle and meal or do you need to impress?
some ideas

Thai vegetable curry,

or Indian curry with chick pea base

lentil chilli with jacket potato

cauliflower and broccoli cheese

gluten free tortillas with a few Mexican options

grilled haloumi on puy lentils with red onion cherry tomato and lemon

use doves farm self raising flour to make any thing that you want to bake
or fruit salad meringue and

I'm going to go with Morrocan bean stew with jacket potatoes and homemade onion bhajis. Does that sound ok?

What should I do for desert. Gluten free of course. No chocolate allowed. I could do fruit salad but that's a bit boring.

GF cheesecake - use crushed GF biscuits as the base. Careful with the gelatine if recipe recommends it (some I've seen have) as obvs not vegetarian then! Carrageenan I think is the alternative?

Eton mess works as a GF dessert too.

Butternut squash risotto.

Make sure you don't use parmesan cheese to finish it as it is often made with animal rennet. There are vegetarian versions though.
