Posting here for traffic, sorry

I'm far from a domestic goddess so need all the help I can get. At the moment I do a full time degree at Uni then work nights from 5-10. As I'm sure you can imagine I spend an absolute fortune on food and if I say I'll wait until I get home for dinner I end up starving and spend a fortune on food again.

Does anyone have any lunch/dinner recipe ideas that would keep for uni and work? We have a microwave in work but not at uni :D Thanks xxxx

I know it's a cliché but do you have time to batch cook at all?

You can make soups / curries / pasta sauces / chilli / bolognese. All can be defrosted in microwave (or the night before) and made at work.

Jacket spuds are another thing you can bung in microwave and the choice of toppings is endless.

You can get microwave rice and veg.

Do you have a toaster?

I second the batch cooking and then freezing it by individual portions. Then you can grab and go. Dishes like vegetable lasagna, soups, grilled or roasted veggies and rice would work well.

Batch cooking is the best way as pp said. List your favourite meals and work out which keep/freeze/can be portioned up well.

Yes, batch cooking - Quorn chilli with rice/ quinoa, chickpea and spinach curry, sweet potato and lentil dhal, roasted vegetables with goats cheese on top, mushroom and blue cheese risotto, sweet potato and kidney bean enchiladas - all fairly cheap, freeze well, you could build up a collection and have something different each day. If you don't have a freezer buy a load of veg that you can use in lots of different dishes. Things like peppers, mushrooms, red onions.

Try pinterest for ideas, there are some lovely recipes on there and you can always alter them (:
